1 tablespoon olive oil
1 cup chopped onion
2 medium carrots, chopped
2 stalks celery, chopped
2 cloves garlic, minced
2 teaspoons peeled and minced fresh ginger
1 pound cooked, cubed chicken
1 tablespoon curry powder
3 1/2 cups (two 14.5-ounce cans) reduced-sodium chicken broth
1 14-ounce can unsweetened coconut milk
1/4 cup chopped fresh cilantro
Salt and freshly ground black pepper to taste
2 cups instant rice, cooked

Steps:

  • Heat the oil in a large skillet over medium-high heat. Add the onion, carrots, celery, garlic and ginger and cook, stirring, until the vegetables soften, about 3 minutes. 2 tablespoons chicken soup base
7 cups water
1 cup lentils
2/3 cup brown rice
2 cups apples
3 cups tomatoes
1/4 cup celery
1/2 cup onion
3/4 cup raisins
4 teaspoons curry powder
1 teaspoon cinnamon
1/4 teaspoon black pepper
1 teaspoon sea salt

Steps:

  • Chop about 3-4 apples and 3-4 large tomatoes.
  • Finely chop celery and 1 small onion.
  • Stir together chicken soup base and water.
  • Mix all ingredients in a 4 quart crock pot.
  • Simmer 3 hours on high or until thick.
