STEAMED PORK AND MUSHROOM "SIU MAI" DUMPLINGS



Steamed Pork and Mushroom

4 ounces ground pork
1 tablespoon peeled and grated fresh ginger
1 tablespoon Shaohsing rice wine or dry sherry
1 tablespoon light soy sauce
2 teaspoons cornstarch
1 teaspoon toasted sesame oil
3 fresh shiitake mushrooms, stemmed and finely chopped
1 large scallion, green part only, finely chopped
Sea salt
Ground black pepper
10 square wonton wrappers
15 goji berries (can substitute frozen peas and carrots)
Vegetable oil, optional if not using perforated parchment
1 tablespoon hot Guilin chili sauce
1 tablespoon light soy sauce

Steps:

  • For the filling: In a large bowl, combine the pork, ginger, rice wine, soy sauce, cornstarch, sesame oil, mushrooms and scallions. Sprinkle with salt and pepper and mix well.
  • For the dumplings: Take 1 wonton wrapper and place 1 heaping teaspoon of the filling in the center. Then gather up the sides of the wonton wrapper and mold around the filling into a ball shape, leaving the center exposed. Dip your finger in some water and run it around the top of the wonton wrapper. Fold the excess wrapper down and pinch the wonton wrapper around the filling firmly to prevent it from opening up and separating from the filling when cooked. Top each dumpling with a goji berry.
  • Oil the bottom of a bamboo steamer and/or line it with a piece of perforated parchment paper. Place the dumplings in the steamer, cover with a lid and place over a pan or wok of boiling water (making sure the water does not touch the bottom of the steamer). Steam the dumplings until cooked, 7 to 8 minutes.
  • For the dipping sauce: Meanwhile, combine the chili and soy sauces in a bowl. Serve with the dumplings.

Soup:
2 cups water
3/4 ounce dried porcini mushrooms*
3 1/2 tablespoons extra-virgin olive oil, divided
4 garlic cloves, minced
1 pound crimini (baby bella) mushrooms, sliced
1 teaspoon finely chopped fresh thyme
Fine sea salt
3 tablespoons dry Sherry
1 1/2 cups chopped onion
3 cups thinly sliced leeks (white and pale green parts only; about 2 large)
8 cups Light Vegetable Broth or good-quality canned vegetable broth (such as Swanson)
Pinch of cayenne pepper
Parsley dumplings:
3/4 cup (scant) low-fat cottage cheese
6 tablespoons (3/4 stick) butter, room temperature, divided
2 large eggs, room temperature
1 cup all purpose flour, divided
1 teaspoon fine sea salt
Pinch of ground nutmeg
1/4 cup finely grated Parmesan cheese
3/4 cup finely chopped fresh Italian parsley

Steps:

  • For soup:
  • Bring 2 cups water and porcini mushrooms to boil in small saucepan. Remove from heat, cover, and soak 20 minutes. Using slotted spoon, transfer mushrooms to work surface; slice thinly. Reserve cooking liquid.
  • Heat 2 tablespoons oil in heavy large skillet over medium-high heat. Add garlic; stir 30 seconds. Add crimini mushrooms and thyme; sprinkle with sea salt and sauté until mushrooms are browned, stirring often, about 12 minutes. Add Sherry; stir until liquid is absorbed, about 1 minute. Set mushroom mixture aside.
  • Heat 1 1/2 tablespoons oil in another heavy large skillet over medium-high heat. Add onion; cook until translucent and beginning to brown, stirring often, about 6 minutes. Add leeks; reduce heat to medium, sprinkle with sea salt, and sauté until vegetables are soft and golden, stirring often, about 15 minutes.
  • Bring broth to simmer in large pot over medium-high heat. Pour in reserved mushroom cooking liquid, leaving sediment behind. Add all mushrooms, onion mixture, and cayenne. Simmer 1 minute to heat through. Season to taste with salt. DO AHEAD: Can be made 1 day ahead. Cool, cover, and chill.
  • For parsley dumplings:
  • Puree cottage cheese in mini processor until smooth. Using electric mixer, beat 3 tablespoons butter and eggs in medium bowl. Add cottage cheese, 1/2 cup flour, 1 teaspoon sea salt, and nutmeg; beat on low speed just to blend. Stir in 1/2 cup flour, cheese, and parsley.
  • Bring large pot of salted water to boil. Using teaspoon, scoop piece of dough about size of cherry. Holding spoon just above boiling water, use second spoon to push dough into water. Working quickly, repeat about 10 more times. When dumplings rise to surface, simmer until cooked through, 2 1/2 to 3 minutes. Using slotted spoon, transfer dumplings to large plate. Repeat with remaining dough. DO AHEAD: Can be made 1 day ahead. Cover and refrigerate.
  • Melt 3 tablespoons butter in large skillet over medium heat. Working in 2 batches, add dumplings to skillet. Cook until brown in spots, 2 to 3 minutes per side.
  • Bring soup to simmer. Divide dumplings among wide shallow bowls. Divide soup among bowls and serve.

"Vushka" means little ears in Ukrainian, and with their curvy whorls, that's just what they look like, especially when they turn bright red in a bowl of borscht served for Sviata Vecheria, the traditional 12-dish Ukrainian dinner that is meatless and dairy-free. The East Village restaurant Veselka serves the dinner from Dec. 24 to Jan. 6.

1/4 cup dried porcini mushrooms
3 tablespoons vegetable oil
1 small onion, minced
4 cups chopped button mushrooms
Salt
ground black pepper
1 large egg yolk
1 tablespoon vegetable oil
3 1/4 cups all-purpose flour, more as needed

Steps:

  • Make filling: place dried mushrooms in a small bowl and add 1/4 cup boiling water. Let soften, about 10 minutes. Strain, reserving liquid and mushrooms separately.
  • In a large skillet, heat oil over medium heat. Add onion and cook, stirring often, until golden but not brown, about 5 minutes. Add button mushrooms and cook, stirring, until mushrooms have released their liquid, about 10 minutes. Sprinkle with salt and pepper and drain liquor. In a food processor, combine both kinds of mushrooms. Spoon in porcini liquid, leaving behind any silt in bottom of bowl. Pulse together until finely ground but not pasty: about 3 or 4 pulses. Add salt and pepper to taste and set aside.
  • Make dough: In a small bowl, combine egg yolk, oil and 1 1/2 cups lukewarm water and whisk 1 minute. Place flour in a large bowl and make a well in center. Add a third of the egg mixture and lightly mix in with fingers or a fork. Repeat 2 more times. Using hands, fold dough together until soft: if crumbly, gently work in more water; if sticky, add flour. Transfer to a lightly floured board and knead 3 minutes. Form into a ball, transfer to a bowl and refrigerate 45 minutes.
  • Lightly flour a work surface and a pan or board for the finished dumplings. Divide dough into 3 sections. Using a well-floured rolling pin, roll each section out until very thin and in a rough rectangle. Use tip of a sharp knife to cut dough into 1 1/2-inch squares.
  • Drain any excess liquid from filling. Place 1/2 teaspoon filling in center of each square. Fold squares in half to form triangles, sealing filling inside. (If dough is becoming dry, lightly moisten fingertips to seal.) Pinch the 2 opposing corners together to seal tightly. Place on floured surface: do not stack. Repeat with remaining dough and filling.
  • In a large pot of salted boiling water, cook dumplings until they float, 2 to 4 minutes. Drain and serve in hot borscht, or just with sour cream.

Mushroom Stock:
½ cup dried porcini mushrooms
3 cups hot water
2 tsp olive oil
1 onion, coarsely chopped
1 carrot, chopped
1 large garlic clove, sliced
2 mushrooms, sliced, plus trimmings
2 tsp tomato paste
1 T fresh or 1 tsp dried marjoram
½ cup dry white or red wine
1 T four
½ tsp salt, pepper to taste
Ragout:
1½ cups mushroom stock (above)
4 tsp olive oil
2 medium to large onions, sliced about ½ inch thick
¾ pound white mushrooms, rinsed and sliced thickly on a diagonal
3 T chopped parsley
1 T chopped tarragon
1 garlic clove, minced
½ large lemon
1 pound Brussels sprouts, halved and quartered
Herb Dumplings:
1 cup flour
1 tsp baking powder
¾ tsp salt
¾ cup milk, heated with 3 T butter or oil
3 T mixed chopped parsley and tarragon
1 egg

Steps:

  • Mushroom stock Cover dried mushrooms with hot water and set aside. Heat oil in a saucepan over high heat. Add onion, carrot, garlic and fresh mushrooms. Sauté, stirring occasionally, until well browned (about 10 minutes). Reduce heat to medium; stir in tomato paste, marjoram and wine; sprinkle with flour. Once wine has reduced to a syrupy consistency, after about 3 minutes, add the porcini and its soaking water, ½ tsp salt and some pepper. Simmer for 20 minutes, then strain. Ragout As mushroom stock simmers, start ragout. Heat oil in a wide, nonstick skillet. Add onions and cook over medium heat, stirring frequently, until aromatic and nicely colored (about 12 minutes). Raise heat to high and add mushrooms, herbs and garlic to pan. Squeeze lemon juice over mushrooms and sauté until mushrooms are browned, 5-7 minutes, reduce heat to low. As mushrooms cook, bring a pot of water to a boil for the Brussels sprouts. Add salt, then Brussels sprouts and boil until nearly tender, about 4-6 minutes. Drain. Add to pan of onions and mushrooms; also add mushroom stock. At this point, you can turn off the heat until the dumplings are ready. To make dumplings: Mix flour with baking powder and salt. Pour in milk, herbs, and egg. Stir quickly with a fork. Add spoonfuls of dumpling batter to the ragout, making 12 small dumplings in all. Cover pan with tented foil, bring everything to a simmer, and cook for 10 minutes
