Yield 6

Number Of Ingredients 10

1 tablespoon unsalted butter
1 shallot, sliced
Kosher salt and freshly ground black pepper
1/4 cup half-and-half
8 large eggs
1 cup grated Swiss cheese
1 cup diced deli ham
1 tablespoon chopped fresh parsley
1 tablespoon chopped fresh chives, plus more for garnish (optional)
[For Serving:] Green salad (optional)

Steps:

  • Preheat the oven broiler. Melt the butter in a medium nonstick skillet over medium heat. Add the shallot and sprinkle with 1/4 teaspoon salt and a few grinds of pepper. Cook, stirring occasionally, until soft, about 5 minutes. Remove from the heat and cool. Reserve the skillet for cooking the frittata.

Transfer the skillet to the oven and broil until the eggs are just set, about 5 minutes more. Remove from the oven and let stand for 5 minutes. Slide the frittata out onto a large plate or cutting board. Cut into wedges and sprinkle with more chives and serve warm or room temperature with a green salad if desired.

HAM AND EGG FRITTATA

Ham and Egg Frittata image

Great for breakfast, lunch, or dinner! Feel free to experiment with this original recipe by me. Yummy sauteed meat, potatoes, veggies, with eggs. Ingredient measures are approximate. I had to guess how much I used as I put things in as I went. Love an ingredient, ADD MORE! Don't like one much, ADD LESS! Very versatile recipe.
