6 cups chicken stock (clear)
1 cup chicken (boneless,boiled)
1 cup green peas
5 -6 mushrooms
2 -3 green onions
1 carrot
1 egg white
salt
1 -2 teaspoon soya sauce
pepper

Steps:

  • Clean mushrooms and chop into quarters.
  • Cut the spring onion greens into three inch pieces.
  • Peel and dice the carrot.
  • Cut the boiled chicken into cubes.
  • Boil peas, mushrooms and carrot in chicken broth till done.
  • While it is boiling, add chicken cubes and spring onion greens.
  • Beat egg white lightly and drop into the boiling soup through a sieve.
  • Add soya sauce and lastly salt and pepper to taste.
  • Serve hot with bread.

1/2 pound sliced baby portobello mushrooms, divided
1 tablespoon butter
1/4 cup chopped onion
1 garlic clove, minced
1/2 cup half-and-half cream
3 tablespoons sherry or reduced-sodium chicken broth
1 tablespoon minced fresh thyme or 1 teaspoon dried thyme
3/4 teaspoon salt, divided
5 cups fresh or frozen peas, divided
3 cups reduced-sodium chicken broth
2 tablespoons lemon juice
4-1/2 teaspoons minced fresh basil or 1-1/2 teaspoons dried basil

Steps:

  • Set aside 3 tablespoons mushrooms for garnish. In a large skillet, saute remaining mushrooms in butter until tender., Add onion to skillet; saute until tender. Add garlic; cook 1 minute longer. Stir in the cream, sherry, thyme and 1/4 teaspoon salt. Bring to a boil. Reduce heat; simmer, uncovered, for 2 minutes. Cool slightly. Transfer to a blender; process until smooth. 2 ¼ cups dried split peas
2 quarts cold water
1 ½ pounds ham bone
2 onions, thinly sliced
½ teaspoon salt
¼ teaspoon ground black pepper
1 pinch dried marjoram
3 stalks celery, chopped
3 carrots, chopped
1 potato, diced

Steps:

  • In a large stock pot, cover peas with 2 quarts cold water and soak overnight. If you need a faster method, simmer the peas gently for 2 minutes, and then soak for l hour.
  • Once peas are soaked, add ham bone, onion, salt, pepper and marjoram. Cover, bring to boil and then simmer for 1 1/2 hours, stirring occasionally.
  • Remove bone; cut off meat, dice and return meat to soup. Add celery, carrots and potatoes. Cook slowly, uncovered for 30 to 40 minutes, or until vegetables are tender.

1/2 pound sliced bacon, diced
1 large onion, chopped
2 ribs celery, sliced
1 pound dried green split peas
2 quarts water
2 medium potatoes, peeled and diced
2 cups diced fully cooked ham
2 teaspoons salt
1 bay leaf
1/4 teaspoon pepper
1 cup heavy whipping cream

Steps:

  • In a Dutch oven or soup kettle, cook bacon over medium heat until crisp. Using a slotted spoon, remove bacon to paper towels; drain, reserving drippings. Add onion and celery to drippings. Saute until vegetables are tender; drain. Add the peas, water, potatoes, ham, salt, bay leaf and pepper. Bring to a boil. Reduce heat; cover and simmer for 45 minutes or until peas are very tender, stirring occasionally. Discard bay leaf., Cool slightly. Process in small batches in a blender until smooth. This is Megan's version of split pea soup, my version skips the croutons and includes ham. But, because we occasionally have to make something she will eat, I just add the ham to my bowl. If you don't have a vegetarian in your house, putting ham or a ham bone in the soup while it is cooking adds a great flavor.

Number Of Ingredients 9

1 pound dried split peas
2 carrots
1 onion
2 bay leaves
12 cups water
Salt and pepper
5 slices bread
1/3 cup melted butter
1/2 teaspoon garlic powder

Steps:

  • To prepare the soup: Pour the peas into a stockpot and carefully check them for any foreign objects. (I know it sounds weird, but occasionally small stones will slip through during processing.)
  • Peel the carrots and onion and dice them into about 1/2-inch pieces. Place the carrots, onion, bay leaves, and water into the stockpot and bring to a boil over medium-high heat. Decrease the heat to low and simmer, stirring occasionally, for 1 1/2 to 2 hours, or until the peas have broken down. Season to taste with salt and pepper.
  • Preheat the oven to 350°F.
  • Cut the bread into 1/2-inch cubes and place them on a baking sheet. Combine the butter and garlic powder in a small bowl and pour over the bread cubes. Toss the bread cubes until they are evenly coated and bake them for 10 minutes, or until they are golden brown.
  • Ladle the soup into bowls and top with the croutons.
  • It's time to pull out that math you learned in third grade:
  • 2 cups = 1 pint
  • 2 pints = 1 quart
  • 4 quarts = 1 gallon
