Time 1h10m

Yield 6-8 serving(s)

Number Of Ingredients 12

1 pie pastry (for a 10-inch quiche or tart pan or 9-inch pie plate)
1 tablespoon dry breadcrumbs
8 ounces bacon, cut into 1/2 inch pieces
1 medium onion, minced
2 cups chopped portabella mushrooms
2 cups chopped fresh spinach, packed (very well dried)
1/2 teaspoon ground coriander
1/4 teaspoon ground nutmeg
2 cups grated cheddar cheese, divided use
6 ounces cream cheese
4 eggs
1 cup milk

Steps:

  • Preheat oven to 375°F.
  • Sprinkle bottom of pastry-lined quiche/tart pan or pie plate with 1 tbsp dry breadcrumbs (this will absorb any excess moisture).
  • Place bacon in a large skillet; cook over medium high heat until evenly brown; remove with slotted spoon and drain on paper toweling; set aside.
  • With 2 tbsp of the bacon fat, sauté onion and mushrooms until all the liquid released by the mushrooms has evaporated; add spinach and cook 1-2 minutes, just until spinach wilts; add reserved bacon, coriander and nutmeg and season lightly (remember there will be salt in the cheese); place in pastry and top with 1 1/2 cups cheddar cheese.
  • Beat together cream cheese, eggs and milk; season to taste; carefully pour over quiche and gently shake quiche to distribute custard.
  • Bake in preheated oven for 40-50 minutes, or until quiche is golden-brown, sprinkling with 1/2 cup of cheese 10 minutes before quiche is done (put the quiche directly on the oven floor for the last 10-15 minutes of baking to crisp up the crust); cool for 10-15 minutes before serving.

MUSHROOM BACON

Mushroom Bacon image

Caramelized, crispy mushrooms take on the meaty flavor of bacon in this recipe. Put a few slices on toasted bread with sliced tomato and crisp lettuce for a vegetarian BLT. Or serve alongside a bowl of oatmeal for a great breakfast to jumpstart your day.

Provided by Food Network Kitchen

Categories     side-dish

Time 1h55m

Yield Eight 1/4-cup servings

Number Of Ingredients 8

6 tablespoons vegetable oil
1 pound portobello mushrooms, cleaned and thinly sliced (about 1/8-inch thick)
2 tablespoons molasses
2 tablespoons low-sodium soy sauce
2 tablespoons brown sugar
1/2 teaspoon garlic powder
3/4 teaspoon smoked paprika
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 300 degrees F, line 2 baking sheets with parchment paper and line a third baking sheet or pan with paper towels. Brush each parchment-lined baking sheet with about 1 tablespoon of vegetable oil. Place the mushroom slices in a single layer, very close together, on the parchment and brush lightly with the remaining vegetable oil.
  • Bake the mushrooms until slightly softened and brown, 25 to 30 minutes, then flip the mushrooms over, rotate the pans in the oven and bake until the mushrooms are well-browned and the edges are crispy, another 30 to 35 minutes. Remove from the oven and transfer to the paper-towel lined baking sheet to dry for a few minutes. (Leave the oven on.)
  • In a large bowl, whisk together the molasses, soy sauce, brown sugar, garlic powder and paprika. Carefully toss the baked mushrooms in the marinade until evenly coated. Place half the marinated mushroom strips in a single layer (it's ok of they overlap) into a large metal steamer basket or colander that fits snugly into a large, heavy metal pot.
  • Prepare a stovetop smoker: Line the bottom of a large, heavy metal pot with foil. Place two large handfuls of applewood chips in the bottom of the pot. Place the pot over medium heat and use a lighter to light a few of the wood chips. Once the chips are smoking, place the mushroom-filled steamer basket or colander inside the pot, then place a tight-fitting lid on top. Allow the mushrooms to smoke for 5 to 10 minutes, depending on how strong of a smoky flavor you want. Repeat with the second batch.
  • After the mushrooms are smoked, return them to the baking sheets in a single layer. Sprinkle with salt and a few grinds of pepper and return to the oven until crisp, 3 to 5 minutes. Refrigerate in an airtight container for up to 5 days. Reheat in a low oven before serving.

Time 1h5m

Yield 6 serving(s)

Number Of Ingredients 9

1 tablespoon butter, plus extra for the dish
4 slices bacon
8 green onions, thinly sliced (white and green parts)
1 lb mushroom, sliced
8 large eggs
1 cup milk
1 teaspoon salt
1/8 teaspoon pepper
2 1/2 cups shredded cheddar cheese

Steps:

  • Preheat the oven to 350°; butter a shallow 2-quart casserole.
  • In a large skillet, cook the bacon until crisp; drain well and crumble.
  • Add the green onions and 1 tablespoon butter to the pan and cook for 2 minutes, stirring.
  • Add the mushrooms and cook for 2 to 3 minutes more, then remove from the heat.
  • In a medium bowl, beat the eggs, milk, salt, and pepper together.
  • Stir in the cheese and mushroom mixture.
  • Pour into the prepared dish and bake, uncovered, for 30-35 minutes, or until puffed and set.

Tips:

  • Choose the right mushrooms. Button mushrooms and cremini mushrooms are the most commonly used mushrooms for bacon, but you can also use shiitake, portobello, or oyster mushrooms. Just be sure to slice them thinly so they cook evenly.
  • Marinate the mushrooms. Marinating the mushrooms in a mixture of soy sauce, tamari, or liquid aminos, maple syrup, garlic, and spices helps to add flavor and depth. You can also add a little bit of smoked paprika or chipotle powder to give the bacon a smoky flavor.
  • Cook the mushrooms over medium heat. Cooking the mushrooms over medium heat allows them to caramelize and develop a crispy texture. If you cook them over too high heat, they will burn.
  • Don't overcrowd the pan. When cooking the mushrooms, don't overcrowd the pan. This will prevent them from cooking evenly and becoming soggy.
  • Serve the mushroom bacon immediately. Mushroom bacon is best served immediately after it is cooked. It can be used as a topping for burgers, sandwiches, salads, or pizzas.

Conclusion:

Mushroom bacon is a delicious and healthy alternative to traditional bacon. It is easy to make and can be used in a variety of dishes. With its smoky, savory flavor and crispy texture, mushroom bacon is sure to be a hit with everyone who tries it.
