1/4 cup olive oil
1 medium yellow onion (diced (about 2 cups))
2 medium carrots (peeled and diced (about 1 cup))
2 stalks celery (diced (about 1 cup))
1/2 teaspoon dried thyme or 5-6 fresh thyme stems
1/2 teaspoon kosher salt + more to taste
1/4 teaspoon freshly ground black pepper + more to taste
1/4 cup all-purpose flour
4 cups low-sodium vegetable broth
2 cups Yukon Gold potatoes (washed and cut into 1/2-inch dice (about 1 pound))
6 ounces white button mushrooms (chopped (about 2 cups))
3 ounces oyster mushrooms (chopped (about 1 cup))
1 cup Silk® Unsweetened Soymilk
2 teaspoons red wine vinegar
Fresh parsley
Oyster crackers
Sliced button mushrooms

Steps:

  • Set a large saucepan or medium soup pot over medium heat. Add the olive oil. When hot, add the onions, carrots, and celery. Cook, stirring occasionally, until tender, about 8 minutes. Add dried thyme (if using fresh, wait until you add the broth to add the fresh thyme), 1/2 teaspoon kosher salt, and 1/4 teaspoon freshly ground black pepper. Add the flour and cook, stirring constantly, for 3 minutes.
  • Slowly drizzle in the vegetable broth, stirring to lift the brown bits. Add the potatoes, mushrooms, and if using fresh thyme, add it now. Bring to a boil, then reduce heat to low. Cover and simmer until the potatoes are tender, about 15 minutes.
  • Remove soup from heat and remove the lid. Let cool a bit. If you used fresh thyme, remove the stems. Remove 4 cups of soup from the pot (I ladle it into a large 4-cup liquid measuring cup). Pour the 4 cups of soup into the pitcher of a blender (or you can puree it with an immersion blender).
  • Return pureed soup to the pot and stir to combine. Add soymilk. Return to a simmer. Stir in red wine vinegar. Taste and add additional salt and pepper if desired.
  • Ladle into soup bowls and garnish with parsley, oyster crackers, and/or sliced button mushrooms if desired.

1/2 pound bay scallops, rinsed and patted dry
1/4 cup all-purpose flour
1 (8-ounce) package sliced mushrooms
1 rib celery, finely chopped
1/4 cup white wine, preferably Chardonnay
1 (10-ounce) can condensed cream of potato soup (recommended: Campbell's)
1 (8-ounce) bottle clam juice
1 teaspoon seafood seasoning

Steps:

  • In medium pot, over medium-high heat, melt 2 tablespoons butter. Dredge scallops in flour. Shake off excess and saute in butter for 3 minutes, or until opaque and starting to color. Use a slotted spoon to remove scallops from pan and set aside.
  • Melt remaining 2 tablespoons of butter in pan. Saute mushrooms and celery for 5 minutes.
  • Stir in wine, potato soup, clam juice and seafood seasoning. Bring to boil, reduce heat and simmer for 10 minutes. Stir in scallops with any accumulated juice and simmer for 3 minutes.

1 (16 ounce) package frozen corn
1 (10 ounce) package fresh mushrooms, thinly sliced (button or baby portabella)
2 tablespoons fresh parsley
1 teaspoon crushed red pepper flakes (more or less to taste)
1/2 cup plain soymilk (more or less to taste)

Steps:

  • Heat 2 tablespoons of the oil in a large pot. Add the onions and garlic. Saute for about 5 minutes.
  • Add veggie broth, potatoes, salt and pepper. Cover and bring to a boil. Reduce heat to a simmer, and cook for 10 minutes, or until potatoes are tender.
  • Meanwhile, heat remaining tablespoon of oil in a skillet. Saute mushrooms.

2 tablespoons minced shallots
2 tablespoons unsalted butter
1 cup finely diced peeled boiling potatoes
1/2 cup fish stock or clam juice
1/2 cup dry white wine
1 1/2 cup chopped cherrystone or chowder clams
2 cups half-and-half
Salt and freshly ground pepper to taste

Steps:

  • Place the mushrooms, shallots and butter in a heavy saucepan. Cover and cook over low heat until the mushrooms are tender, about 10 minutes.
  • Add the potatoes, stock and white wine. Simmer, covered, until the potatoes are very soft, about 30 minutes. Add the clams and half-and-half and simmer uncovered, stirring from time to time, about 10 minutes longer.

2 slices bacon
1 skinless chicken breast half, diced
1 medium onion, diced
2 russet potatoes, peeled if you wish and diced
2 cloves garlic, minced
2 ears sweet corn, kernels sliced off
2 (14 1/2 ounce) cans chicken broth
1 (28 ounce) can peeled tomatoes, drained and chopped
2 cups packed fresh spinach leaves
1 bay leaf
2 tablespoons fresh thyme leaves
1 teaspoon herbes de provence
1 teaspoon salt
1/2 teaspoon red pepper flakes
1/2 teaspoon ground allspice
fresh ground black pepper, to taste
2 tablespoons chopped flat leaf parsley

  • Cover mushrooms with boiling water and set aside for 20 minutes.
  • Cook bacon in a dutch oven over medium heat until crisp, about 5 minutes; crumble into pieces and set aside.

1 large onion, diced
1 red bell pepper, diced
1 green bell pepper, diced
3 cups corn, divided
1 1/2 cups smoked chicken or 1 1/2 cups smoked turkey, shredded
3 medium potatoes, cubed
1/2 cup dried wild mushrooms
4 cups water
2 cups light cream
salt and pepper

Steps:

  • Cook bacon in soup pot, remove and reserve. Cook onions and bell peppers in bacon fat until soft.
  • Stir in 2 cups corn, chicken, potatoes, mushrooms, salt and pepper to taste. Add water and bring to boil. Simmer 30 minutes.

1 lb fresh broccoli
8 oz fresh mushrooms
8 oz butter
1 c flour, sifted
1 qt chicken stock ( fresh, canned, or made with 5 bouillon cubes dissolved in 4 c. hot water)
1 qt half and half
1 tsp salt
1/4 tsp white pepper
1/4 tsp tarragon leaves crushed

Steps:

  • 1. Clean and cut broccoli into 1/2 " pieces. Steam the broccoli for 5 minutes in 1/2 C. of boiling water until tender. Do not drain, set aside.
  • 2. Rinse and slice mushrooms.
  • 3. Melt butter in a large heavy bottomed pan over medium heat. Add the flour to make a roux. Cook for 2-4 minutes. Add chicken stock stirring with a wire whisk. Bring to a boil and reduce the heat to low. Add broccoli, mushrooms, half and half, and spices.
  • 4. Heat but do not boil.

8 ounces cremini mushrooms, sliced or quartered
1 (1 1/4 lb) whole bone-in chicken breasts
2 cups ready-to-serve chicken broth
1 cup water
6 red potatoes, scrubbed and cut into one inch chunks
1 carrot, cut into 1/4 slices
3/4 teaspoon salt
1/8 teaspoon black pepper
1 cup milk
1/4 cup heavy cream
1/2 teaspoon Worcestershire sauce

Steps:

  • In a 3 quart pot, bring chicken breast, broth, and water to a boil over high heat.
  • Reduce heat to low, cover, and simmer about 20 minutes, or until the chicken is no longer pink inside.
  • Remove the chicken from the broth and set aside the pot with the broth.
  • Remove and discard chicken skin and bones.
  • Tear chicken meat into large pieces; set aside.
  • To the broth in the pot, add potatoes, carrot, 3/4 teaspoon of the salt, the thyme, and black pepper.
  • Cover and simmer about 15 minutes, or until the potatoes are tender.
  • Add milk, cream, mushrooms, and the reserved chicken meat.
  • Bring to a boil.
  • Reduce heat, cover, and simmer 5 minutes.
  • Taste and add the remaining salt if needed, along with the Worcestershire sauce.
  • Serve with crusty French bread.

2 tablespoons unsalted butter
1 medium onion, chopped
1 stalk celery, cut into 1/2 inch slices
10 ounces fresh mushrooms, sliced
2 medium boiling potatoes, unpeeled and cut into 1/2 inch cubes
2 cups bottled clam juice
2 cups water
1/2 cup dry white wine
1 teaspoon dried tarragon
1/4 teaspoon dried thyme
1/2 teaspoon white pepper or 1/2 teaspoon black pepper
2 tablespoons cornstarch
1/2 cup heavy cream
1 lb salmon fillet, skinned and cut into 1 inch pieces
1 cup frozen baby peas, thawed
