2 ½ cups dried penne pasta (I used brown rice pasta)
4 Tbsp cooking oil (I use coconut oil)
3 cups mushrooms (chopped)
5 garlic cloves (minced)
3 cups kale (de-stemmed and sliced thin)
1 cup parmesan cheese (freshly grated)

Steps:

  • Boil the pasta according to package instructions. Drain and rinse under cold water and set aside.
  • In a frying pan, add a bit of cooking oil (I used coconut oil) and sliced mushrooms. Cook until mushrooms soften, about 8-10 minutes.
  • Add a bit more cooking oil along with the chopped kale and minced garlic. Season with salt and pepper. Cook 2-3 minutes, or until kale begins to wilt.
  • Add in the cooked pasta and mix together.
  • Remove the frying pan from heat. Add 2 Tbsp more cooking oil and 1 cup parmesan cheese. Toss together until cheese melts. Sprinkle last ¼ cup parmesan on top of the dish and serve.

Steps:

  • Cook pasta according to package instructions. Drain and reserve about 1 cup of pasta water.
  • Meanwhile heat the oil in a skillet and add the shallots and garlic, cook until fragrant.
  • Add the mushrooms and sauté for about 5 minutes until it softens and start to turn golden brow. Season mushrooms with salt and peper.
  • Add chopped kale and toss to a gentle sauté (about 3 minutes) until leaves start to wilt but maintain it's shape.

1 pound rigatoni
Kosher salt
2 tablespoons extra-virgin olive oil
1 pound assorted mushrooms, stemmed, sliced into 1/3-inch pieces
3 tablespoons unsalted butter
3 cloves garlic, smashed and peeled
3 tablespoons all-purpose flour
3 cups whole milk
2 1/2 cups grated Parmesan
2 cups grated Gruyere
2 cups chopped Tuscan kale (3 to 4 leaves)
1 cup grated Gruyere
1 cup panko breadcrumbs
1/2 cup smoked almonds, chopped
1/4 cup extra-virgin olive oil
2 teaspoons lemon zest (2 lemons)

Steps:

  • Preheat the oven to 375 degrees F.
  • For the pasta: Cook the rigatoni in a large pot of generously salted boiling water until al dente, about 3 minutes less than the package directions. Drain, reserving 1/2 cup of the cooking water.
  • Heat the olive oil over medium-high heat in a large Dutch oven. Sear the mushrooms, undisturbed, for 3 minutes; stir, and season with 1 teaspoon salt. Sear on the reverse side an additional 2 minutes. Remove the mushrooms from the pan.
  • Lower the heat to medium and melt the butter in the Dutch oven. Add the garlic and flour, and cook, stirring, for 1 minute. Whisk in the milk and simmer gently until the sauce just thickens, 5 minutes. Remove from the heat and add the Parmesan, Gruyere and 1/2 teaspoon salt. Let cool slightly, then add half of the seared mushrooms, and puree with an immersion blender.
  • In a large bowl, toss the pasta with the sauce and the remaining half of the mushrooms, adding about 1/4 cup of the reserved pasta water or more if desired. Transfer to a baking dish.
  • For the gremolata: In a medium bowl, combine the kale, Gruyere, panko, smoked almonds, olive oil and lemon zest.
  • Scatter the gremolata over the pasta and bake until golden on top and bubbling, about 40 minutes.

Steps:

  • Make the pasta in boiling salted water, drain (reserve 2 cups of the pasta water if you're making the vegetarian version), drizzle with olive oil, season with sea salt and black pepper, toss and set aside.
  • Sauté with olive oil or grill the sausages to put a crust on the outside, drain on a paper towel, cut into 1/4-inch rounds, then set aside. 3 cloves garlic, chopped
10 oz mushrooms, sliced
1 bunch lacitino kale, destemmed and chopped
1/2 cup cherry or grape tomatoes, sliced
1/2 tsp salt
8 oz chickpea or lentil pasta
3 tbsp almond butter
1/4 cup balsamic vinegar
1 tsp salt
1 tsp garlic powder
1/4 cup water
2-4 tbsp reserved pasta water (optional, as needed)

Steps:

  • Bring a large pot of water to a boil.
  • While the water is coming up to a boil, chop the onions, garlic, slice the mushrooms, destem and chop the kale and cut the tomatoes in half.
  • In a bowl combine the creamy balsamic sauce ingredients in a bowl. Stir well to combine.
  • When the water comes up to a boil, add the pasta to the pot. For chickpea pasta, cook the pasta one minute less than indicated on the box.
  • Preheat a large skillet over medium heat. When the skillet is preheated spray with olive oil or avocado oil and add the chopped onion. Cook 3 minutes.
  • After 3 minutes, add the garlic to the saute pan and cook 1 minute.
  • Push the onions and garlic to the side and add the sliced mushrooms. Cook 5-7 minutes. After 5 minutes, you can stir in the onions and garlic.
  • Sprinkle the mushrooms with salt, add chopped kale and stir well. Turn off the heat and allow the kale to wilt.
  • Before draining the pasta, reserve about 1/2 cup of cooking liquid.
  • Drain the pasta and add it directly to the skillet with the veggies. Pour the balsamic sauce over top and add the sliced tomatoes. Stir well.
