Categories     Wine     Shellfish     Appetizer     Coconut     Seafood     Mussel     Curry     White Wine     Fall     Bon Appétit

Number Of Ingredients 9

2 tablespoons (1/4 stick) butter
1/4 cup chopped shallots
2 tablespoons Madras curry powder
1 14-ounce can unsweetened coconut milk
1 1/2 cups dry white wine
3 tablespoons fresh lemon juice
2 small bay leaves
2 pounds black mussels, scrubbed, debearded
Chopped fresh parsley

Steps:

  • Melt butter in heavy large pot over medium heat. Add shallots and curry powder; stir until fragrant, about 1 minute. Add coconut milk, wine, lemon juice and bay leaves; simmer 10 minutes. Add mussels. Increase heat, cover and boil until mussels open, about 6 minutes. Using tongs, place mussels in 4 bowls (discard any mussels that do not open). Boil sauce until slightly thickened, stirring occasionally, about 2 minutes. Season with salt and pepper; discard bay leaves. Spoon sauce over mussels. Sprinkle with parsley.

Tips:

  • Fresh mussels are essential: Make sure your mussels are alive and have tightly closed shells. Discard any mussels with open shells or cracked shells.
  • Properly clean your mussels: Clean the mussels thoroughly under cold water, removing any dirt or debris. Use a scrubbing brush to remove any stubborn dirt or barnacles.
  • Use a large pot: Mussels tend to expand while cooking, so make sure you use a large enough pot to accommodate them.
  • Don't overcrowd the pot: Avoid overcrowding the pot with mussels, as this can prevent them from cooking evenly.
  • Simmer, don't boil: Bring the mussels to a boil, then reduce heat to medium-low and simmer until the shells open, about 5-7 minutes.
  • Discard any unopened mussels: After cooking, discard any mussels that have not opened.

Conclusion:

Mussels in Curry Cream Sauce is a delicious and easy-to-make dish that's perfect for a quick and flavorful meal. By following these tips, you can ensure that your mussels turn out perfectly cooked and tender, swimming in a rich and flavorful curry cream sauce. Serve this dish with crusty bread or rice for a satisfying and unforgettable culinary experience.
