Kosher salt and freshly ground black pepper
1/2 cup full-fat plain Greek yogurt
4 cups vegetable, chicken or seafood stock
Zest and juice of 1 lemon
2 pounds PEI mussels, cleaned
1 tablespoon roughly chopped fresh cilantro

3 cloves garlic, minced
2 tablespoons olive oil
1 bunch parsley, leaves only, chopped
1/2 cup dry white wine or vermouth

Yield Makes 4 servings

Number Of Ingredients 7

2 large shallots, chopped (1/2 cup)
2 tablespoons unsalted butter
1 1/2 teaspoons dried green peppercorns, crushed
1 cup dry white wine
4 pounds cultivated mussels, scrubbed
1/2 cup heavy cream
2 tablespoons chopped flat-leaf parsley

Steps:

  • Cook shallots in butter with 1/4 teaspoon salt in a 5- to 6-quart heavy pot over medium heat, stirring occasionally, until softened, 3 to 4 minutes. Add peppercorns and cook, stirring, 2 minutes, then add wine and bring to a simmer. Add mussels and cook over high heat, covered, stirring once, until mussels just open wide, 5 to 7 minutes. Discard any that remain unopened after 7 minutes.
  • Transfer mussels with a slotted spoon to serving bowls. Stir cream into cooking liquid and bring to a boil. Stir in parsley and salt to taste. Spoon sauce over mussels.

Tips:

  • Fresh Mussels: Always choose fresh mussels with tightly closed shells. Discard any mussels with open shells, as they may be dead or spoiled.
  • Cleaning Mussels: Before cooking, clean the mussels by removing any barnacles or debris from the shells. Use a stiff brush to scrub the shells and pull off any "beards" (small, fibrous strands) that may be attached.
  • Cooking Time: Mussels cook quickly, so be careful not to overcook them. Generally, they are done when the shells open, which usually takes 5-7 minutes.
  • Sauce Variation: Feel free to adjust the sauce ingredients according to your taste preferences. You can add more or less olives, capers, and lemon juice based on your desired flavor profile.
  • Serving Suggestions: Mussels in green olive sauce can be served as an appetizer or a main course. Pair them with crusty bread, grilled vegetables, or a simple salad for a complete meal.

Conclusion:

Mussels in green olive sauce is a flavorful and versatile dish that can be enjoyed in various settings. With its briny mussels, tangy sauce, and aromatic herbs, it offers a delightful culinary experience. Whether you're hosting a special occasion or simply seeking a delectable seafood meal, this recipe is sure to impress.
