Time 30m

Yield 6 servings

Number Of Ingredients 8

1/4 cup olive oil
1 tablespoon minced garlic
1 teaspoon sweet paprika
2 tablespoons all-purpose flour
Salt
black pepper
1/4 cup chopped fresh parsley
3 pounds medium mussels, well scrubbed

Steps:

  • Put the oil in a large, deep skillet over medium heat. When it's hot, add the garlic and cook for 1 minute. Add the paprika and cook for just a few seconds, then add the flour and some salt and pepper and stir until smooth. Slowly pour in 2 cups water, stirring constantly to form a smooth sauce. Adjust the heat so the mixture bubbles gently; cook until the sauce is thick, about 8 minutes. Stir in 2 tablespoons of the parsley.
  • Add the mussels and cover the skillet. Cook until all (or nearly all) the mussels are open, about 5 minutes. (Discard any mussels that do not open.) Garnish with the remaining 2 tablespoons parsley and serve immediately.

Time 20m

Yield 4

Number Of Ingredients 9

½ onion, diced
1 bay leaf
1 clove garlic, chopped
2 tablespoons finely chopped carrot
⅔ cup fish stock
⅔ cup dry white wine
4 pounds fresh mussels, scrubbed and debearded
⅔ cup heavy cream
salt and pepper to taste

Steps:

  • In a large saucepan, combine the onion, bay leaf, garlic, carrot, fish stock, and wine. Bring to a boil, and cook for about 5 minutes to soften the carrot and onion.
  • Add the mussels to the boiling mixture, cover, and cook over high heat until the mussels open, about 5 minutes. Shake the pan occasionally to help them cook evenly.
  • As soon as the mussels have opened, remove them with a slotted spoon and set aside. Remove the bay leaf from the broth, and stir in the heavy cream. Heat through, but do not boil. Taste, and season with salt and pepper. Salt may not be necessary depending on the saltiness of your fish stock.
  • Place mussels into serving dishes, and spoon broth over them to serve.

Tips:

  • Prep mussels properly: Clean mussels thoroughly and discard any with damaged shells or open when tapped.
  • Use fresh, high-quality ingredients: This includes fresh mussels, vegetables, and herbs. Fresh ingredients will result in a more flavorful dish.
  • Don't overcook mussels: Mussels cook quickly, so it's important not to overcook them. Overcooked mussels become tough and rubbery.
  • Use a variety of vegetables: This will add flavor and texture to the dish. Some good choices include bell peppers, onions, celery, and carrots.
  • Season to taste: Add salt, pepper, and other spices to taste. You can also add a squeeze of lemon or lime juice for a bit of acidity.
