Time 38m

Yield 4 serving(s)

Number Of Ingredients 11

10 -11 ounces mustard greens
1 teaspoon cornstarch, combined with
1 teaspoon cold water
1/2 teaspoon sugar
2 teaspoons light soy sauce
1 teaspoon rice wine or 1 teaspoon water
3/4 lb pork tenderloin
2 tablespoons vegetable oil
2 tablespoons black bean garlic sauce
2 tablespoons water, about
fresh ground black pepper

Steps:

  • Wash greens and discard tough stems.
  • Bring a large pot of water to a boil, add greens and time 2 minutes.
  • Drain and rinse with cold water to stop the cooking.
  • Drain again, then cut greens into long diagonal strips.
  • In a medium bowl, combine cornstarch and water.
  • Stir in sugar, soy sauce and rice wine.
  • Cut pork into thin slices and add to the mixture.
  • Marinate about 20 minutes, stirring occasionally.
  • Heat oil in a preheated wok or large heavy skillet over medium heat.
  • Add black bean sauce and stir-fry 1 minute, then add pork and stir-fry 2 minutes.
  • Add mustard greens and water.
  • Mix well and simmer gently about 4 to 5 minutes, until pork is cooked through and greens are tender.
  • Season with pepper and serve.

Tips:

  • Choose the right mustard greens: Look for mustard greens with deep green leaves and no signs of wilting or yellowing. Smaller leaves are more tender and less bitter than larger leaves.
  • Wash the mustard greens thoroughly: Mustard greens can be gritty, so it's important to wash them thoroughly before cooking. Rinse them under cold water, swishing them around to remove any dirt or grit. You can also soak them in a bowl of cold water for a few minutes before draining.
  • Remove the tough stems: The tough stems of mustard greens can be difficult to chew. Use a sharp knife to remove the stems from the leaves. You can also use your hands to snap the stems off.
  • Blanch the mustard greens: Blanching mustard greens helps to remove some of the bitterness and make them more tender. To blanch mustard greens, bring a large pot of water to a boil. Add the mustard greens and cook for 1-2 minutes, or until the leaves are wilted. Immediately remove the mustard greens from the boiling water and plunge them into a bowl of ice water to stop the cooking process.
  • Stir-fry the mustard greens over high heat: Stir-frying mustard greens over high heat helps to preserve their bright green color and crisp texture. Use a large wok or skillet and heat it over high heat. Add a little oil and then add the mustard greens. Stir-fry the mustard greens for 2-3 minutes, or until they are tender-crisp.

Conclusion:

Mustard greens are a delicious and healthy addition to any meal. They are packed with vitamins, minerals, and antioxidants. Mustard greens can be stir-fried, sautéed, steamed, or added to soups and stews. They are also a great source of fiber, which can help to keep you feeling full and satisfied.
