CEDAR PLANKED SALMON WITH MAPLE GLAZE AND MUSTARD MASHED POTATOES

Cedar Planked Salmon With Maple Glaze and Mustard Mashed Potatoes image

Plank cooking is a Native American technique that imparts a subtle smoky flavor to fish, meat, poultry, and vegetables. It is recommended to use a plank of untreated Western red cedar made specifically for cooking purposes.

Yield Serves 6

Number Of Ingredients 10

1 cup pure maple syrup
2 tablespoons finely grated peeled fresh gingerroot
4 tablespoons fresh lemon juice
3 tablespoons soy sauce
1 1/2 teaspoons minced garlic
2 1/2-pound center-cut salmon fillet with skin
Greens from 1 bunch scallions
Mustard Mashed Potatoes, to serve
Special Equipment
An untreated cedar plank (about 17x10 1/2") if desired

Steps:

  • In a small heavy saucepan simmer maple syrup, gingerroot, 3 tablespoons lemon juice, soy sauce, garlic, and salt and pepper to taste until reduced to about 1 cup, about 30 minutes, and let cool. (Maple glaze may be made 2 days ahead and chilled, covered. Bring maple glaze to room temperature before proceeding.)
  • Preheat oven to 350° F. If using cedar plank, lightly oil and heat in middle of oven 15 minutes; or lightly oil a shallow baking pan large enough to hold salmon.
  • Arrange scallion greens in one layer on plank or in baking pan to form a bed for fish.
  • In another small saucepan heat half of glaze over low heat until heated through to use as a sauce. Stir in remaining tablespoon lemon juice. Remove pan from heat and keep sauce warm, covered.
  • Put salmon, skin side down, on scallion greens and brush with remaining glaze. Season salmon with salt and pepper and roast in middle of oven until just cooked through, about 20 minutes if using baking pan or about 35 if using plank.
  • Cut salmon crosswise into 6 pieces. On each of 6 plates arrange salmon and scallion greens on a bed of mashed potatoes. Drizzle salmon with warm sauce.

Time 1h30m

Yield 4 serving(s)

Number Of Ingredients 16

8 links pork sausage
English mustard, to serve
1 1/2 lbs onions, sliced thinly
1 pinch sugar
2 tablespoons sunflower oil
1 ounce butter
1 teaspoon plain flour
2 1/4 cups brown ale
2 1/4 cups beef broth
1/2 star anise
2 cloves
2 fresh bay leaves
2 lbs potatoes, peeled and cut into chunks
2 ounces butter
2 -3 tablespoons milk
salt and pepper

Steps:

  • Stir in the beer, beef broth, star anise, cloves and bay leaves and boil vigorously until reduced to a rich, glossy sauce - about 20 minutes in a large sauté pan.

  • Beat in the butter with some seasoning and enough milk to make a smooth, creamy mash.
  • Spoon the mashed potatoes onto warmed plates and rest the sausages alongside.
  • Pour over some of the gravy and serve with a good spoonful of English mustard.

GRAINY MUSTARD MASHED POTATOES

GRAINY MUSTARD MASHED POTATOES image

Categories     Potato     Side     Broil     Thanksgiving     Dinner

Yield 4 - 6

Number Of Ingredients 10

8 medium-sized Yukon gold potatoes, quartered unpeeled
2 cups heavy cream
2 cups whole milk
4 cloves garlic, peeled and gently smashed
4 sprigs fresh thyme
1 bay leaf
Extra-virgin olive oil
2 tablespoons butter
1 tablespoon whole-grain mustard
Kosher salt and freshly ground black pepper

Steps:

  • Add potatoes, cream, milk, garlic, thyme and bay leaf into a large saucepan and gently boil for 15 minutes until potatoes are just tender and the tip of a paring knife goes through with little resistance. Strain potatoes and reserve the cream mixture but discard the bay leaf, thyme stems and the garlic. Mash the potatoes and fold in the cream mixture until the potatoes are smooth and creamy. Fold in about a tablespoon of the olive oil, the butter, and the grainy mustard. Season with salt and pepper.

Tips for Making the Best Mashed Potatoes

  • Choose the right potatoes. Yukon Gold or Russet potatoes are the best for mashed potatoes because they are high in starch and will give you a smooth and creamy texture.
  • Boil the potatoes in salted water. This will help to infuse the potatoes with flavor and prevent them from becoming bland.
  • Drain the potatoes well. This will help to remove excess water and prevent the potatoes from becoming watery.
  • Add milk, butter, and seasonings. The type of milk and butter you use will affect the flavor of the mashed potatoes, so choose wisely. Season the potatoes to taste with salt, pepper, and other herbs and spices.
  • Beat the potatoes until smooth. You can use a hand mixer or a potato masher to beat the potatoes until they are smooth and creamy. Avoid overbeating the potatoes, as this can make them gluey.
  • Garnish the mashed potatoes. For a special touch, you can garnish the mashed potatoes with chopped fresh herbs, grated cheese, or a sprinkle of paprika.

Conclusion

Mashed potatoes are a classic dish that can be enjoyed by people of all ages. They are perfect for any occasion, from a casual weeknight dinner to a holiday feast. With a few simple tips, you can make the best mashed potatoes that will impress your family and friends.
