Yield Makes 6 servings

Number Of Ingredients 8

6 green onions, chopped
1 fresh jalapeño chile, finely chopped, with seeds
1 large green bell pepper, coarsely chopped
1/2 teaspoon salt
3 tablespoons unsalted butter
1 pound ripe tomatoes, coarsely chopped
3 cups corn kernels (5 to 6 ears)
1/2 pound small fresh okra, trimmed, keeping stem end intact

Steps:

  • Cook the onions, jalapeño, bell pepper, and salt in the butter in a 12-inch heavy skillet over medium heat, stirring occasionally, until onions begin to brown, 7 to 9 minutes. Stir in the tomatoes and cook, stirring occasionally, until broken down into a sauce, about 15 minutes.

Tips:

  • Choose fresh, tender okra. Look for pods that are bright green and free of blemishes. Avoid okra that is brown or slimy.
  • Soak the okra in cold water for 30 minutes before cooking. This will help to reduce the okra's sliminess.
