INDIGO'S FABULOUS MEATLOAF!
This was my first try at making meatloaf, and boy, was I suprised at how good this was! I have been craving it ever since, and it made so much, I froze two extra loaves for later! Yummy yummy yummy! (I also love love garlic, so you can add less if it's too much for you!) It's very moist and flavorful!!! You can soak up some of the grease beforehand if you place slices of bread in the loaf pan before the meat goes in, but I found that it wasn't too bad, and I like the juices!

Enjoy this, my friends! If you're on the fence about meatloaf, or even if you've written it off entirely as something you'd never ever try, give this a shot. Consider it adventure eating, like huitlacoche. Or calf nuts.

MEATLOAF - FABULOUS - 30 MINUTE MEAL
Delicious meatloaf! This is now my favorite way of making this dish. My hubby doesn't usually like meatloaf, but "loves" this one. Wonderful texture - great flavor, try it, you will love it. I tried this after a neighbor gave me a recipe, I didn't have 3 of the ingredients so I improvised - the new version is lots better than the original!

CLASSIC MEATLOAF
Good meatloaf is about as comforting as comfort food gets. Thankfully, meatloaf doesn't have to be complex to be good. It just needs to be tender (from breadcrumbs soaked in milk and gentle handling) and flavorful (from onion, garlic, and ketchup).

OUR FAVORITE MEATLOAF
This ultimate meatloaf recipe took rounds and rounds of testing to get just right. Our final version incorporates an ideal blend of seasoned ground beef and pork, aromatics, and breadcrumbs and bakes in a freeform loaf on a baking sheet instead of in a loaf pan for maximum browning. The result is a loaf that is savory, tender, and juicy, yet holds together well when sliced.

Steps:
- Position rack in center of oven; preheat to 350°F. Line a rimmed baking sheet or 13x9" shallow baking dish with foil. Soak breadcrumbs in milk in a large bowl until ready to use.
- Pulse onion, celery, and garlic in a food processor until finely chopped. (Alternatively, you can finely chop by hand.)
- Heat oil in a large skillet over medium. Add onion mixture, 1 tsp. salt, and 1/2 tsp. pepper. Cook, stirring occasionally, until softened, 5-7 minutes. Remove from heat, stir in Worcestershire, and scrape into bowl with breadcrumb mixture. Add beef, pork, eggs, 1/4 cup ketchup, and remaining 1 1/4 tsp. salt and 1 tsp. pepper, then mix with your hands to combine.
- Form meatloaf mixture into a long, well-packed, approximately 5"-wide loaf shape on prepared baking sheet. Brush top of loaf with 1/4 cup ketchup. Bake meatloaf until an instant-read thermometer inserted into the center registers 155°F, 60-75 minutes. Let rest 15 minutes before slicing. Serve with more ketchup alongside.
- Do Ahead
- Meatloaf can be made 3 days ahead; wrap in foil and chill, or freeze for up to 3 months.
Tips:
- Choose the right meat: A combination of ground beef and pork is a classic choice for meatloaf, but you can also use ground turkey, chicken, or lamb. If you're using leaner meat, add some extra fat, such as butter or bacon, to keep the meatloaf moist.
- Season the meatloaf well: Don't be afraid to use plenty of spices and herbs in your meatloaf. Common seasonings include garlic, onion, Worcestershire sauce, and thyme. You can also add some grated cheese or chopped vegetables to the meatloaf for extra flavor.
- Mix the meatloaf thoroughly: Make sure the meatloaf mixture is well combined before you shape it into a loaf. This will help to ensure that the meatloaf cooks evenly.
- Shape the meatloaf into a loaf: Place the meatloaf mixture in a loaf pan and shape it into a loaf. You can also make individual meatloaves by shaping the mixture into small balls.
- Bake the meatloaf: Bake the meatloaf in a preheated oven at 350 degrees Fahrenheit for about 1 hour, or until the internal temperature reaches 160 degrees Fahrenheit.
- Let the meatloaf rest: Let the meatloaf rest for about 10 minutes before slicing and serving. This will help to keep the meatloaf moist and juicy.
Conclusion:
Meatloaf is a classic comfort food that is easy to make and always a crowd-pleaser. With a few simple tips, you can make a delicious meatloaf that your family and friends will love. So next time you're looking for a quick and easy meal, give meatloaf a try.
