Time 45m

Yield 1 cup

Number Of Ingredients 9

1 1/2 pounds cherries
2 tablespoons whole mace blades or 2 teaspoons ground mace
1 1/2 teaspoons black peppercorns
1 teaspoon dry yellow mustard
1 teaspoon whole cloves
3/4 teaspoon ground cinnamon
1/3 teaspoon ground nutmeg, preferably freshly grated
1 teaspoon kosher salt
1/4 to 1/2 cup apple cider vinegar, preferably unfiltered

Steps:

  • In a saucepan, combine the cherries with 1/2 cup water. Bring to a simmer over medium-low heat and cook until the cherries soften, 8 to 10 minutes. Let cool slightly, then pass the cooked cherries and their liquid through a food mill, or press them through a colander, to make a chunky juice.
  • In a clean saucepan, combine the juice with the spices and salt. Simmer over low heat until reduced by half, about 15 minutes, stirring often.
  • Add 1/4 cup vinegar and keep cooking until thick enough to coat the back of a spoon. Remove a bit of the ketchup, let cool and taste. Adjust salt, spices and vinegar until the flavor is sweet, spicy and tart. The ketchup will keep refrigerated in an airtight container for up to 2 weeks.

HOMEMADE KETCHUP

Homemade Ketchup image

This ketchup does come close to those name brands in terms of taste, texture and color. I've never had a tomato paste-based ketchup that I liked, so I decided to cook down crushed tomatoes instead. By using the slow cooker, we take most of the labor out of the process.

GROUND CHERRY PIE II

Ground Cherry Pie II image

Ground cherries, also known as husk tomatoes, produce tiny tomato-like fruits in papery husks on low, lanky bushes. This is an old Mennonite recipe with a crumb topping.

MY GROUND CHERRY KETCHUP

My Ground Cherry Ketchup image

This is a wonderful recipe that I created with a small quantity of ground cherries that I produced in the summer of 2004. Ground cherries are those little golden yellow fruits, Latin name Physalis peruviana (for a picture, http://www.flickr.com/photos/24030963@N05/2799007503/). Enjoy it with sausages, ham, pork or lamb chops, meatloaves or even on a cream cheesed bagel!

KETCHUP - FROM FRESH GARDEN TOMATOES

Ketchup - from Fresh Garden Tomatoes image

We all know Ketchup or Catsup. But this is your kicked up, homemade, garden-grown version. An absolutely delicious way to use up your extra garden tomatoes.

Provided by CelticBrewer

Categories     Sauces

Time 6h

Yield 2 Pints, 64 serving(s)

Number Of Ingredients 13

6 lbs tomatoes
1 tablespoon salt
2 garlic cloves
1/4 cup sugar
1/4 cup onion, chopped
1 cup apple cider vinegar
1/2 teaspoon mustard seeds
1/2 teaspoon black peppercorns
1/2 teaspoon whole allspice
1/2 teaspoon celery seed
1/2 teaspoon red pepper flakes
1 bay leaf
2 whole cloves

Steps:

  • Depending on size, halve or quarter your tomatoes. Sauce tomatoes (Roma) are ideal, but any will work. I used a combo of Roma, Beefsteak, and (mostly) Cherry.
  • OPTIONAL: Smoke a tray's worth of the tomatoes. I cold smoked mine for a few hours over hickory. It gave it a subtle but delicious smoke flavor. Again, this is totally optional.
  • Add the tomatoes, salt, garlic, sugar, and onions to a pot and boil for 30 minutes.
  • Cool the mixture until you can send it safely through your food mill. I used the mixer attachment and it worked beautifully. If you don't have a food mill, you can peel and squeeze the tomatoes using the boiling water / ice bath method.
  • Return the now de-seeded and de-skinned tomato sauce to the pot and back onto the stove.
  • Continue to boil the sauce to reduce and thicken.
  • Meanwhile, in another non-reactive pot; heat the apple cider vinegar with all the remaining spice additions. Heat until the spices have infused into the vinegar.
  • Using a fine strainer to leave behind the whole spices, pour the vinegar into the tomato mix. If you don't have a strainer or tea-ball, you can wrap the spices in a cheesecloth satchel.
  • Continue to reduce until you reach the desired ketchup texture. This can take 4-6 hours. I've heard of people using a crock pot for this process.
  • Follow standard canning procedure if you want a shelf-stable product. Otherwise, cool and keep in the fridge.

Tips:

  • Choose ripe ground cherries for the best flavor and texture.
  • Use a food processor or blender to quickly and easily puree the ground cherries.
  • Add a bit of vinegar to the ketchup for a tangy flavor.
  • Experiment with different spices and herbs to create your own unique ketchup recipe.
  • Canning the ketchup will extend its shelf life for up to a year.

Conclusion:

Ground cherry ketchup is a delicious and unique condiment that can be used to add flavor to a variety of dishes. It's easy to make at home with just a few simple ingredients, and it's a great way to use up extra ground cherries. Whether you're a fan of ketchup or just looking for something new to try, ground cherry ketchup is definitely worth a try.
