Best 5 My Moms Chinese Pot Roasted Chicken Recipes

facebook share image   twitter share image   pinterest share image   E-Mail share image

A classic Chinese dish, my mom's Chinese pot roasted chicken is a beloved family recipe that has been passed down through generations. This traditional dish is not only incredibly flavorful but also incredibly aromatic as it simmers away, filling the house with the tantalizing scents of ginger, garlic, soy sauce, and five-spice. The chicken is cooked low and slow in a rich and flavorful broth, resulting in fall-off-the-bone tenderness and a succulent, juicy texture. The star of the dish, however, is the incredibly crispy skin, which provides the perfect contrast to the tender meat.

Let's cook with our recipes!

MOM'S CHICKEN EN COCOTTE

Mom's Chicken En Cocotte image

This is a farm-style French dish that my Mom's German grandmother taught her to make as a young girl. It's easy and similar to our pot roast meals and very tasty as well. Mom updated the one she had to make it even easier for us to make years later. She made enough to make a different meal with her leftovers as well.

Time 3h35m

Yield 4 to 6 servings

Number Of Ingredients 12

3 pounds rump roast
Kosher salt and freshly ground black pepper
3 tablespoons olive oil
2 stalks celery, chopped
1 carrot, chopped
1 onion, chopped
4 cloves garlic, minced
1 cup red wine
One 28-ounce can tomato product (I'm using crushed tomatoes)
1 cup liquid (I'm using water)
2 bay leaves
1 pound dry pasta (I'm using shells)

Steps:

  • Preheat the oven to 350 degrees F.
  • Season the meat with salt and pepper. Heat the oil in a large Dutch oven over high heat. Sear the meat all over, about 2 minutes per each side.
  • Move the meat to the side (or remove it from the pot altogether if necessary), add the celery, carrot and onion and brown the vegetables, stirring occasionally, about 3 minutes.
  • Add the garlic and cook for a minute or 2 longer. Add the wine to deglaze the pot, scraping up the browned bits on the bottom. Add the tomatoes, water and bay leaves (and the meat if you removed it). Bring the liquid to a simmer and taste for seasoning. Add more salt if necessary. Cover the pot and bake, basting the meat occasionally, until tender, about 3 hours.
  • About 20 minutes before the meat is tender, bring a pot of water to a boil and salt liberally. Add the shells, give it a stir and cook until al dente according to the package instructions. Drain the pasta.
  • To serve, you can pull the meat apart with a couple of forks right in the pot at the table. Serve with the pasta, plenty of sauce and vegetables, tossing them all together.

Tips for Making the Best Chinese Pot Roasted Chicken:

  • Choose the Right Chicken: Opt for a whole chicken that weighs around 3 to 4 pounds for evenly cooked, succulent meat.
  • Prepare the Marinade: Make sure the marinade fully coats the chicken, allowing it to absorb all the flavors. Use a large bowl or bag to ensure proper coverage.
  • Marinate for at Least 30 Minutes: Allow the chicken to marinate for at least 30 minutes, or up to overnight, to enhance the flavors and ensure a tender, juicy chicken.
  • Use a Dutch Oven or Deep Pan: A Dutch oven or deep pan with a tight-fitting lid is ideal for pot roasting the chicken. This helps create a moist environment for even cooking.
  • Brown the Chicken First: Before braising the chicken in the sauce, brown it in a hot pan to develop a rich, golden-brown color and enhance the overall flavor.
  • Add Vegetables and Aromatics: Incorporate vegetables like carrots, celery, and onions into the pot along with aromatic ingredients such as ginger and garlic for added flavor and texture.
  • Use a flavorful Broth: Choose a broth that complements the marinade and ingredients used. Chicken broth or a combination of chicken and vegetable broth works well.
  • Simmer, Don't Boil: Maintain a gentle simmer throughout the cooking process to prevent the chicken from becoming tough or overcooked.
  • Check the Internal Temperature: Use a meat thermometer to check the internal temperature of the chicken. Aim for an internal temperature of 165°F (74°C) for fully cooked chicken.
  • Let the Chicken Rest: Once cooked, let the chicken rest for about 10 minutes before carving. This allows the juices to redistribute, resulting in more tender and flavorful meat.

Conclusion:

Chinese pot roasted chicken is a delectable dish that combines the essence of Chinese cuisine with the convenience of a one-pot meal. With its succulent chicken, flavorful sauce, and aromatic vegetables, it's a satisfying dish perfect for both special occasions and weeknight dinners. By following these tips and carefully executing each step, you can create a tender, juicy chicken that's bursting with flavor and sure to impress your family and friends.
