1 cup white corn syrup
1 cup creamy peanut butter
6 cups Rice Krispies
2 tablespoons butter
1/2 cup semi-sweet chocolate chips
1 1/2 cups milk chocolate chips
1 cup butterscotch chips

Steps:

  • In a heavy sauce pan cook sugar, syrup and butter over a medium heat until sugar is dissolved.
  • Remove from heat and add peanut butter. In a large bowl mix into the rice krispies until krispies are coated and press firmly into a buttered 9 x 12 inch pan.
  • In a double boiler melt butterscotch and chocolate chips until soft and creamy. Then pour and spread over the uncut bars in the pan.
  • When they are cool cut into the size bars you like to serve.
  • I warn you -- these will make you yearn for more until every last one is gone! :). And consider yourselves lucky cuz it took me nine years to get her recipe! No other Scotcheroos are as good as hers!
  • Hugs, Jelly.

Tips:

  • To make the perfect dough, be sure to use cold butter or margarine and work it into the flour until it resembles coarse crumbs. This will help to create a flaky, tender kolacky.
  • When rolling out the dough, be sure to do so on a lightly floured surface. This will help to prevent the dough from sticking and tearing.
  • If you don't have a kolacky maker, you can use a knife to cut the dough into squares or circles. Just be sure to make the cuts deep enough so that the filling will be able to seep through.
  • When baking the kolackys, be sure to preheat the oven to the correct temperature. This will help to ensure that the kolackys bake evenly.
  • Once the kolackys are baked, let them cool slightly before filling them. This will help to prevent the filling from seeping out.
  • To make the filling, be sure to use ripe fruit. This will give the filling a sweet, delicious flavor.
  • If you are using a powdered sugar glaze, be sure to mix it with a little bit of milk or water until it reaches a smooth, pouring consistency.

Conclusion:

Kolackys are a delicious and versatile treat that can be enjoyed by people of all ages. With a variety of fillings and toppings to choose from, there is sure to be a kolacky that everyone will love. So next time you are looking for a sweet treat to bake, give kolackys a try. You won't be disappointed!
