Steps:

  • Boil the fettuccine according to package instructions. As the water preheats, begin the sauce.
  • Melt the butter in a large saucepan over medium heat. Add the garlic and cook for one minute.

1 1/2 cups milk
1 1/2 cups heavy cream
1/2 cup imported parmesan cheese, grated
1/2 cup imported romano cheese, grated
6 egg yolks, from fresh jumbo eggs
salt and black pepper

  • HEAT milk and cream in a heavy bottom saucepan until it begins to simmer.
  • Turn off heat.
  • Slowly whip in cheese, then remove from heat.
  • PLACE egg yolks in a separate bowl and slowly whip in a portion of the hot milk and cream mixture.

  • Place back on very low heat and continually stir until simmering.

This is really Olive Garden Alfredo Sauce. I absolutely love OG Alfredo and I got this recipe from a general manager. He told me after I bugged and bugged and bugged him! I haven't figured out the reheating yet...except for to reheat sauce slowly. Very slowly. The butter starts to separate if you reheat it too fast. The only place that I could find "white sauce base/mix" in my town was at Gordon's Food Service (restaurant supply store), which I guess can also be used to make biscuits. And I thought that 8 fl. oz and 1 cup were the same thing...even on a measuring cup...so I just measure to the 8 oz. line on a measuring cup. That was something that the manager emphasized to me.
