- Clean oysters, and place in a large stockpot. Pour in beer and enough water to cover oysters; add 2 cloves garlic, seasoned salt, and peppercorns. Bring to a boil. Remove from heat, drain, and cool.
- Once oysters are cooled, break off and discard the top shell. Arrange the oysters on a baking sheet. Preheat oven to 425 degrees F (220 degrees C.)
- Melt butter in a saucepan over medium heat. Cook onion and garlic in butter until soft. Reduce heat to low, and stir in spinach, Monterey Jack, fontina, and mozzarella. Cook until cheese melts, stirring frequently. Stir in the milk, and season with salt and pepper. Spoon sauce over each oyster, just filling the shell. Sprinkle with bread crumbs.
- Bake until golden and bubbly, approximately 8 to 10 minutes.

- In a small bowl combine the butter with the garlic, shallots, and 1 tablespoon of the parsley. Stir to blend thoroughly, and then transfer to the refrigerator while you prepare the oysters.
- Set the oven to the broil setting or preheated to 500 degrees F. Position the top oven rack in the upper third of the oven.
- Season the oysters with salt and pepper. Divide the oysters evenly between 6 individual gratin dishes just large enough to hold the oysters in 1 layer. Shallow gratin dishes approximately 4 by 6 by 1-inch that have a volume capacity of about 8 ounces work well. Sprinkle the crabmeat evenly over the oysters in the ramekins. Using a small spoon, place dabs of the compound butter over the tops of the dishes, dividing the entire amount of butter evenly among the 6 dishes. Squeeze fresh lemon juice over the top. In a small bowl combine the bread crumbs, grated cheese and olive oil. Sprinkle evenly over the oysters and transfer the gratin dishes to a large baking sheet and place in the oven. Broil until the crumbs are golden brown and the oysters are just cooked through and curled around the edges.
- While the oysters are baking, in a small bowl combine the bread crumbs, 2 tablespoons of the Parmesan, and the olive oil. Stir until thoroughly combined.
- Remove the oysters from the oven and sprinkle the crumb mixture evenly over the tops of the oysters in the dishes. Return to the oven and bake until the crumbs are golden brown and the oysters are just cooked through, about 3 to 4 minutes longer.
- Remove the oysters from the oven, garnish with the remaining Parmesan and parsley, and serve immediately, with lemon wedges for guests to use according to taste.

- In a large skillet over medium heat, melt the butter. Add the bread crumbs and sauté until they are just a tiny bit golden, about 1 minute or so. Stir in the watercress, parsley, celery and celery leaves, scallions, and garlic. Cook until fragrant, 1 minute. Stir in the Pernod and let it cook off for another minute. Remove from the heat and stir in the capers and a pinch of salt (not too much, those oysters are salty too).
- Preheat the broiler. Fill a baking pan (or two) with a 1/2-inch layer of coarse or rock salt. Lay the oysters on top of the salt. Spoon a little of the sauce mixture on top of the oysters. Broil until just golden, about 2 minutes. Serve hot.

- 1. The Prep: Prepare your spinach (package instructions) drain well separate and set aside. Place your bacon on a baking pan in a single layer cook 10-12 minutes at 350* remove from oven and place on paper towels to drain then chop in small pieces. Grate your asiago and mozzarella cheese and place in separate bowls. Last but not least place your oysters in a bowl and gently pick through for shell particles.
- 2. in a large skillet add your spinach to 2tbs of melted butter and gently saute 2-3 minutes over med heat, add your chopped bacon & garlic powder and saute another 2 minutes, finally add your grated asiago cheese over top of your spinach mixture sprinkle with salt and pepper and remove from heat.
- 3. Here is the best part. Take a muffin pan and place two of your prepared oysters in each cup, place your spinach mixture over the top, sprinkle lightly with bread crumbs, then add your grated mozzarella over the top of your spinach and sprinkle with remaining bacon pieces. Place in your 400* degree oven for 4-5 minutes (or until cheese on top becomes melty) switch oven to broil and cook until the tops become a golden brown. remove from oven and carefully spoon mixture onto your plate of choice. If you really want to be fancy place over the top of a toasted french bread point.

- In skillet, melt butter& saute celery& onion, stir in parsley, spinach, anise, worcestershire, and pepper.
- Remove from heat.
- Grease or spray 8 ramekins.

- Preheat oven to 450F/230C. Lightly scrunch a piece of foil and put it in a baking dish big enough to hold all of your oysters so it covers the dish.
- First, shuck the oysters and loosen the meat from the shell. Pour off the liquid, setting it aside. Place the oysters on the foil in the baking dish so they are sitting flat.
- Roughly chop the spinach, watercress or arugula/rocket and thinly slice the scallion/spring onion. Finely chop the garlic.
- Melt the butter in a small skillet/frying pan. Add the spinach, watercress/arugula, scallion and garlic. Cook, stirring for a couple minutes so everything softens and the liquid largely evaporates.
- Add the pernod, lemon juice and hot sauce. Stir through and cook a minute more so the liquid evaporates then remove from the heat.
- Spoon a heaped teaspoon over each oyster then top with a little parmesan.
- Bake for approx 8-12 mins until the top is lightly browned.
