Categories     main-dish

Time 8h40m

Yield 6 to 8 servings

Number Of Ingredients 19

1 cup plus 3 tablespoons all-purpose flour
Salt and freshly ground black pepper
2 1/2 pounds boneless chuck, cut into 1-inch cubes
4 slices bacon
3 tablespoons olive oil, optional
3 tablespoons butter
2 tablespoons tomato paste
3 cups beef broth
1 pound baby multi-colored beets with tops, peeled and tops removed
1 pound rainbow carrots with tops, peeled and tops removed
1 pound multi-colored Peewee potatoes
1 pint Brussels sprouts, chopped
2 cups good red wine
1/2 cup fresh parsley
2 teaspoons Worcestershire sauce
1 teaspoon whole allspice
5 cloves garlic
3 bay leaves
1 medium onion, chopped

Steps:

  • Put 1 cup of the flour in a shallow bowl and season with salt and pepper. Dredge the beef in the seasoned flour and set aside.
  • Heat a heavy skillet on medium-high heat, add the bacon and cook until crisp. Set the bacon aside, leaving the drippings behind in the skillet (chop the bacon and reserve for serving). In batches, brown the beef in the skillet, adding olive oil if necessary, about 3 minutes per batch. Transfer each batch to the slow cooker as it browns.
  • Add the butter and remaining 3 tablespoons flour to the skillet. Cook 3 minutes, stirring with a whisk. Whisk in the tomato paste. Turn off the heat, pour in the beef broth and whisk to get all the ingredients incorporated with the brown bits from the bottom of the skillet. Add the mixture to the slow cooker.
  • Add the beets, carrots, potatoes, Brussels sprouts, red wine, parsley, Worcestershire, allspice, garlic, bay leaves and onions. Set the cooker to low and cook for 8 hours.
  • Serve in bowls sprinkled with the reserved bacon.

NANCY LINDAHL'S HEARTY SWEET AND SOUR BEEF STEW

Nancy Lindahl's Hearty Sweet and Sour Beef Stew image

Here is a crock pot stew that I found published in the Minneapolis Tribune many years ago. After you brown the meat and put every thing together, it cooks by itself. I have never met Nancy, but I thank her every time the aroma of this meal in a pot fills my kitchen. It serves at least 4 hungry people and left over's can be refrigerated for several days. After cooking all day, it still retains it's sweet/sour characteristics without either a burned taste or the washed out blandness that often requires more seasoning when served.

kosher salt and cracked black pepper to taste
¼ cup all-purpose flour
1 tablespoon smoked paprika
1 tablespoon canola oil
3 cups chopped onion
6 cloves garlic, minced
4 tablespoons tomato paste
2 cups dry red wine
1 tablespoon dried thyme

1 teaspoon chopped fresh thyme, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).

SWEET-SOUR BEEF STEW

A recipe from my childhood; Mom found it in a Better Homes and Gardens recipe book from 1977. I prefer the crockpot method, but if you don't have one, you can make this on the stove. There is a note in the cookbook that says she used this recipe to make pot roast in the Crockpot as well.

Tips:

  • For the best flavor, use a chuck roast or other tough cut of beef. These cuts have more connective tissue, which breaks down during cooking and creates a rich, flavorful stew.
  • Brown the beef in batches to avoid overcrowding the pan and steaming the meat. This will help to develop a nice crust on the beef, which will add flavor to the stew.
  • Use a variety of vegetables in your stew. This will add color, flavor, and nutrients. Some good choices include carrots, celery, onions, potatoes, and peas.
  • Don't be afraid to experiment with different spices and herbs. A classic sweet and sour stew will typically include soy sauce, vinegar, and brown sugar, but you can also add other spices like ginger, garlic, or chili powder to taste.
  • Let the stew simmer for at least an hour, or until the beef is fall-apart tender. This will allow the flavors to meld and develop.

Conclusion:

Sweet and sour beef stew is a classic comfort food that is perfect for a cold winter day. It is easy to make and can be tailored to your own taste preferences. With a little planning and effort, you can make a delicious and satisfying stew that the whole family will enjoy.
