As far as I know this is the original recipe for Navajo Bread. It's is great with honey and butter. The Navajo put chiles, cheese, onion, lettuce and beans on it, and call them Nava Tacos.

2 cups oil for frying
4 cups all-purpose flour
3 tablespoons baking powder
2 tablespoons salt
2 ½ cups warm milk

Steps:

  • In a large heavy bottomed frying pan, heat 1 inch of vegetable oil or lard to 365 degrees F (185 degrees C).
  • In a large mixing bowl, combine flour, baking powder, salt and milk; mix well. When the dough has pulled together, form it into small balls and pat them flat.
  • Place 3 or 4 at a time into the hot oil. When the rounds begin to bubble, flip them over and cook until golden. Drain on paper towels and serve hot.

5 cups hot water
1/2 cup potato flakes
1/2 cup sugar
1 cup powdered milk
2 tablespoons salt
1/2 cup oil or 1/2 cup shortening
2 tablespoons yeast
10 -14 cups flour

Steps:

  • Combine hot water, shortening, potato flakes, powdered milk, sugar.
  • Stir to dissolve shortening, if using shortening instead of oil.
  • When temperature is tepid, add yeast.
  • Mix in 5 cups flour and the salt.
  • Stir to a smooth sponge.
  • Add flour to make a smooth and elastic dough.
  • Let rise until double (about 45 minutes).
  • Punch down and let rise again.
  • Shape into loaves let rise.
  • Bake in 375°F oven for about 35 minutes.

1 cup sugar
1 cup sorghum or 1 cup molasses
3/4 cup oil or 3/4 cup lard
1/2 cup hot water
2 eggs
1 teaspoon baking soda
2 teaspoons cinnamon
1/2 teaspoon salt
2 teaspoons ginger
6 -7 cups white flour
2 eggs

Steps:

  • Combine sugar, sorghum and oil. Rinse sorghum from cup with hot water.
  • Add 2 eggs.
  • Mix together the following: soda, cinnamon, ginger, salt, and flour.
  • Combine the two mixtures.
  • Refrigerate dough overnight.
  • Roll out and cut with cookie cutter.
  • Bake at 350°F for 10 minutes.
