Time 4h30m

Yield 6 to 8 servings

Number Of Ingredients 15

One 11-ounce box vanilla wafers
8 tablespoons (1 stick) unsalted butter, at room temperature
2 tablespoons granulated sugar
1 teaspoon orange zest
Kosher salt
Two 8-ounce blocks cream cheese, at room temperature
One 14-ounce can sweetened condensed milk
1 cup confectioners' sugar
1 teaspoon grapefruit zest
1 teaspoon lemon zest
1 teaspoon orange zest
1 cup whipped cream
2 oranges, peeled and sliced into rounds
1 grapefruit, peeled and sliced into rounds
1 lemon, peeled and sliced into rounds

Steps:

  • For the crust: Line a 9-by-13-inch baking dish with parchment, leaving a 2-inch overhang for easy removal.
  • In the bowl of a food processor, add the vanilla wafers, butter, granulated sugar, zest and a pinch of salt. Pulse until the mixture is a very fine crumb and is starting to clump together. Press the mixture into the prepared baking dish. Chill the dish in the freezer while you make the filling.
  • For the filling: Add the cream cheese, condensed milk, confectioners' sugar, grapefruit zest, lemon zest and orange zest to a large bowl. Whip together with an electric hand mixer until completely combined and there are no clumps of cream cheese. Fold in the whipped cream. Remove the crust from the freezer and pour in the filling, using a spatula to smooth it into an even layer. Return to the freezer and freeze for at least 4 hours or overnight.
  • For the topping: When the filling is set, remove the whole bar from the baking dish and place on a cutting board; removing the parchment. Decorate the top with the orange, grapefruit and lemon rounds, then carefully slice into bars. Serve immediately.

22 Reese's Peanut Butter Cups
3 cups chocolate chips
14 ounces sweetened condensed milk

Steps:

  • Line a 9 x 9 inch pan with foil and spray with cooking spray. Place the peanut butter cups in an even layer on the bottom of the pan. (You should use 16 on the bottom)
  • Place chocolate chips and sweetened condensed milk in a medium saucepan over low heat. Stir until chips and milk are melted together.
  • Once everything is melted together, spread evenly over peanut butter cups in prepared pan. Immediately sprinkle with the crumbled Reese's, pressing them lightly into the fudge.

NO BAKE LEMON SQUARES

No Bake Lemon Squares image

I learned this recipe at school in my home economics class many, many years ago. It was such a hit, it was my job to make these on every special occasion. They are very tart with the lemon juice. You can use either fresh squeezed lemon or lemon juice from the bottle. I find that fresh lemons are a hit and miss with the strength of the tartness so I generally use the bottled juice. If you use fresh, you can also grate some lemon peel into the filling.

Categories     Dessert

Time 30m

Yield 36 squares

Number Of Ingredients 6

32 -36 graham crackers
1 (300 ml) can sweetened condensed milk
1/4 cup fresh lemon juice, or bottled
1 tablespoon butter, softened
1 cup icing sugar
2 1/2-3 teaspoons lemon juice

Steps:

  • FILLING.
  • In a small bowl, mix Condensed Milk with the 1/4 cup Lemon Juice. It will appear runny at first but when it sits, it thickens. Set aside.
  • In a square container (I use a Tupperware square container that I can seal with the lid) line with graham crackers. You will have to cut some crackers to fit. Take a bread and butter knife and gently saw through the cracker until it cuts through.
  • Top with the lemon mixture.
  • Top the lemon mixture with another layer of graham crackers. Again, you will have to cut some to fit around the edges.
  • ICING.
  • Cream the butter with a bit of the icing sugar until there are no lumps left. Add more icing sugar a bit at a time until it's too hard to stir. Add a tsp of lemon juice and mix until smooth again and no lumps remain. Keep alternating icing sugar and lemon juice until its of spreading consistency.
  • Spread over top layer of graham crackers.
  • Cover and let sit over night.
  • Cut into squares and enjoy.

Tips:

  • For a smoother filling, use a high-powered blender or food processor to blend the sweetened condensed milk, cream cheese, and lemon juice until completely smooth.
  • If you don't have a food processor, you can also use a hand mixer to blend the ingredients until smooth. Just be sure to blend for a few minutes until the mixture is completely smooth and creamy.
  • Be sure to use fresh lemon juice for the best flavor. Bottled lemon juice can be used in a pinch, but fresh lemon juice will give your bars a brighter, more citrusy flavor.
  • If you don't have any graham cracker crumbs, you can make your own by crushing graham crackers in a food processor or blender until they are fine crumbs.
  • You can also use a different type of cookie crumb for the crust, such as chocolate cookie crumbs or vanilla wafer crumbs.
  • Be sure to chill the bars for at least 4 hours before serving, or overnight for the best flavor.

Conclusion:

These No-Bake Sweetened Condensed Milk Citrus Bars are a delicious and easy dessert that is perfect for any occasion. They are made with a simple graham cracker crust, a creamy sweetened condensed milk filling, and a bright and citrusy lemon topping. These bars are sure to be a hit with everyone who tries them!
