NO CARB SPINACH BREAD
A low carber's dream come true! I saw this on the "Today" show and was intrigued. This came from the "Taste of Home" website. I haven't made this yet, but definitely plan too! I'm guessing this is more like a polenta than a bread. Note cook time and servings are for the smaller version, not the loaf.

NO CARB OR LOW CARB GLUTEN FREE SPINACH BREAD
A tasty No Carb or with a little cheese a low carb bread. A slice of this bread with a thin slice of pepper cheese broiled in top and a slice of bacon is one of my favorite breakfasts. The cheese works with my diabetic regimen but feel free to omit or use less. My gluten free daughter uses just swiss cheese. I have kept it refrigerated in a baggie for 2 weeks with no problems.

Tips:
- Use fresh spinach. Fresh spinach has a more vibrant flavor and color than frozen spinach. If you only have frozen spinach, thaw it completely and squeeze out all the excess water before using it.
- Don't overcook the spinach. Overcooked spinach will be mushy and lose its flavor. Cook it just until it is wilted, about 1-2 minutes.
- Use a good quality cheese. The cheese is one of the main ingredients in this bread, so it's important to use a good quality cheese that you enjoy. I recommend using a sharp cheddar cheese or a Parmesan cheese.
- Don't overmix the dough. Overmixing the dough will make the bread tough. Mix it just until the ingredients are combined.
- Bake the bread at a high temperature. This will help the bread to rise and brown properly. I recommend baking the bread at 375 degrees Fahrenheit for 30-35 minutes.
Conclusion:
This no-carb spinach bread is a delicious and healthy alternative to traditional bread. It's perfect for those who are following a low-carb or keto diet, or for anyone who is looking for a healthier bread option. The bread is made with almond flour, coconut flour, and spinach, and it's packed with nutrients. It's also easy to make and can be enjoyed for breakfast, lunch, or dinner.
