This is a great alternative to the familiar yellow potato salad. The dried dill weed is much more potent than fresh and alleviates some of the blandness of similar recipes.

Tips:

  • Choose the right potatoes: Waxy potatoes, such as Yukon Gold or Red Bliss, hold their shape better than starchy potatoes, such as Russet, and are less likely to fall apart when cooked.
  • Cook the potatoes until they are tender but not mushy: You should be able to easily pierce them with a fork, but they should not be falling apart.
  • Cool the potatoes completely before making the salad: This will help prevent the salad from becoming watery.
  • Use high-quality mayonnaise: A good mayonnaise will make a big difference in the flavor of the salad.
  • Add the mayonnaise to the potatoes while they are still warm: This will help the mayonnaise to evenly coat the potatoes.
  • Season the salad to taste: You may want to add more salt, pepper, or dill to taste.
  • Serve the salad immediately or chill it for later: The salad can be served immediately or chilled for up to 24 hours before serving.
