1 tbsp sesame oil (, toasted (Note 2))
1 tbsp canola oil ((or other neutral oil))
2 tbsp soy sauce ((Note 3))
2 tbsp sweet chilli sauce
1 tbsp sriracha ((adjust spiciness to taste))
2 tbsp lime juice ((sub rice or cider vinegar))
1 garlic clove (, minced)
2 to 4 tbsp water (, if needed)
350g / 12 oz fresh egg noodles ((about 4 cups, packed))
1.5 cups carrot (, julienned (1 large or 2 small carrots))
2 cups beansprouts
1.5 cups green beans (, halved)
1.5 cups red bell pepper/capsicum (, finely sliced (1 large))
3 green onion stems (, finely sliced on the diagonal )
1 tbsp white sesame seeds ((preferably toasted))

Steps:

  • Prepare noodles according to packet directions (most just require soaking in hot water). Drain, rinse and set aside to cool.
  • Dressing - Mix together Dressing ingredients, using water only if needed to loosen so it can be tossed through salad. If you reduce Sriracha, might need to add smidge more lime.
  • Beans - Steam or boil green greens until just cooked, tender but still crisp. Drain under running water to cool.
  • Toss - Place salad ingredients in a big bowl, toss with dressing.
  • Garnish with sesame seeds then serve at room temp. Keeps 4 days in the fridge.

3 tablespoons low-sodium soy sauce

1/2 cup sliced scallions
1/2 cup roughly chopped fresh basil

Steps:

Steps:

  • To make the peanut lime dressing, combine all the ingredients in a bowl or blender. Whisk or blend until smooth. Set the dressing aside.

1 cup diced fresh tomatoes
1/2 cup diced celery
1/4 cup diced red onion
1/2 cup Thai Peanut Sauce, recipe follows
1/4 cup light mayonnaise
2 tablespoons fresh lime juice
Salt and freshly ground black pepper
6 cups shredded lettuce
1/4 cup chopped dry-roasted peanuts
3 cups reduced-sodium beef broth
2 tablespoons reduced-sodium soy sauce
2 tablespoons creamy peanut butter
2 teaspoons toasted sesame oil
1 teaspoon hot sauce

Steps:

1 lb cooked al dente and cooled thin pasta (that's 1 lb. after cooking)
2 -4 scallions, chopped,save some for garnish
1 red bell pepper, julienned,save some for garnish
roasted peanuts, chopped,save all for garnish
1 tablespoon black sesame seeds or 1 tablespoon sesame seeds, with additional for garnish (optional)
1 tablespoon grated fresh ginger
2 cloves garlic, minced
1 serrano chili, chopped
3 tablespoons fresh cilantro leaves
1 1/2 tablespoons unsalted creamy peanut butter
3 tablespoons fresh lime juice
1 1/2 tablespoons rice vinegar
1 1/2 tablespoons soy sauce

  • To make dressing: In a food processor, process everything except the oil.

Substitute with any raw vegetables you have on hand, such as cabbage, carrot, fennel, asparagus, broccoli or cauliflower. The spicy peanut sauce is very adaptable: If you don't want to use peanut butter, you can use any nut or seed butter, like cashew, almond, sunflower or even tahini. Both the soba and the peanut sauce can be prepared ahead of time and stored in the fridge overnight, but wait to combine them until you are ready to eat for the best texture and consistency. The peanut sauce thickens as it sits, so add a tablespoon or two of water to loosen it up, if necessary.

1 medium zucchini or cucumber (about 6 ounces)

1 bell pepper (any color)

2 scallions, trimmed and finely chopped

Steps:

  • Bring a pot of salted water to the boil. Add the soba, stir to prevent sticking, and cook according to package instructions until just tender. Rinse under cold water until the noodles are completely cold.
  • Meanwhile, make the sauce: In a medium bowl, combine the peanut butter, soy sauce, maple syrup, lime juice, sesame oil, chile oil or hot sauce, and garlic.
