8 ounces thin noodles
1/4 cup soy sauce
1/4 vegetable oil
3 tablespoons pure sesame oil
2 tablespoons sugar
2 tablespoons rice wine vinegar
1/2 teaspoon hot chile oil
4 cloves garlic, minced
4 tablespoons salted butter
8 ounces cremini mushrooms, thinly sliced
4 ounces shiitake mushrooms, thinly sliced
4 green onions, thinly sliced

Steps:

  • Bring a large pot of water to a boil. Cook the noodles according to the package instructions in the boiling water. Drain and set aside.
  • Mix together the soy sauce, vegetable oil, sesame oil, sugar, vinegar, chile oil and garlic in a small pitcher. Set aside.
  • Add the butter to a large skillet over medium-high heat. When the butter has melted, add the mushrooms and cook until thoroughly browned, 5 to 7 minutes. Pour in the sauce and stir to combine. Remove the skillet from the heat. Add the noodles and toss to combine. Sprinkle over the green onions and give one final toss. Serve.

1/2 lb wide egg noodles
1/2 lb mushroom, sliced
1 large onion, sliced
3 ounces cheese, grated
1 egg
1/4 cup breadcrumbs
salt and pepper
1 ounce butter

Steps:

  • Cook the noodles in boiling salted water for 10 minutes. Strain and put into a greased casserole.
  • Slice the mushrooms and the onion and saute in butter until tender. Add to the noodles.
  • Mix in most of the cheese, reserving some for sprinkling over the top.
  • Beat the egg, and stir into remaining butter the mushrooms were sauteed in, adding a little boiling water to make a sauce. Pour the sauce over the noodles and mushrooms. Sprinkle with cheese and breadcrumbs and dot with small nobs of butter.
  • Bake in a 325F over for 20 to 25 minutes.

2 cups Button Mushrooms (halved)
3 tablespoons Soy sauce

1 tablespoon Rice Vinegar
2 tablespoons Sweet Chilli Sauce
1 tablespoon toasted Sesame Oil
1/2 cup finely chopped Scallions (green part only)

Steps:

  • Boil egg noodles in salted water according to package directions. Once cooked, drain, rinse with cold water and set aside.
  • Whisk together soy sauce, chilli flakes, vinegar, sweet chilli sauce and sesame oil and set aside.

3 portabella mushrooms, parboiled for 3 minutes and drained, slivered
3 shallots, peeled & minced

1 low-salt vegetable stock cube
2 nests medium egg noodles
1 small head broccoli, broken into florets
1 tbsp sesame oil, plus extra to serve
250g pack shiitake or chestnut mushroom, thickly sliced
1 fat garlic clove, finely chopped
½ tsp chilli flakes, or crumble one dried chilli into pieces
4 spring onions, thinly sliced
2 tbsp hoisin sauce
handful roasted cashew nuts

Steps:

  • Put the stock cube into a pan of water, then bring to the boil. Add the noodles, bring the stock back to the boil and cook for 2 mins. Add the broccoli and boil for 2 mins more. Reserve a cup of the stock, then drain the noodles and veg.
  • Heat a frying pan or wok, add the sesame oil and stir-fry the mushrooms for 2 mins until turning golden. Add the garlic, chilli flakes and most of the spring onions, cook 1 min more, then tip in the noodles and broccoli. Splash in 3 tbsp of the stock and the hoisin sauce, then toss together for 1 min using a pair of tongs or 2 wooden spoons. Serve the noodles scattered with the cashew nuts and remaining spring onions. Add a dash more sesame oil to taste, if you like.

2 quarts cold water
2 3/4 teaspoons kosher salt, plus more to taste
1/4 pound dry rice noodles (also called rice sticks)
3 tablespoons scallion oil
20 large shiitake mushrooms, stemmed and thinly sliced
3 cloves garlic, peeled and minced
1 teaspoon sugar
1 teaspoon grated lemon zest
2 teaspoons fresh lemon juice
1 teaspoon hot red-pepper sauce
1 teaspoon sesame oil
2 scallions, trimmed and thinly sliced

Steps:

  • Place the water and 2 teaspoons of salt in a large pot, cover and bring to a boil. Add the noodles and cook until al dente, about 3 minutes, stirring with chopsticks to break them up. Drain, rinse with cold water and drain well. Set aside.
  • Heat 2 tablespoons of scallion oil in a large pot over medium-high heat. Add the shiitakes and saute until softened, about 5 minutes. Add 1 tablespoon of scallion oil, the garlic, 3/4 teaspoon of salt and the sugar. Cook, stirring, for 30 seconds. Add the lemon zest and noodles, lower the heat to medium and toss to mix well.
  • Add the lemon juice and pepper sauce and toss until well coated. Add the sesame oil and toss to coat. Remove from heat and toss in the scallions and additional salt, if needed. Place on a heated platter and serve immediately.
