3 cups cauliflower florets
1 teaspoon sesame oil
3 carrots, diced
3 cloves garlic, minced
1 lb large shrimp, peeled and deveined
1 cup frozen peas, thawed
2 eggs, beaten
3 tablespoons low sodium soy sauce
½ teaspoon white pepper
green onion, for garnish

Steps:

  • Pulse cauliflower in a food processor until broken into rice-sized pieces.
  • Heat the sesame oil in a large skillet or wok. Toss in the carrots and sauté until soft, about 5 minutes.
  • Add in the garlic and shrimp and sautée until the shrimp begin to turn pink, about 2 minutes.
  • Add the peas and cauliflower rice and mix until the cauliflower has warmed through.
  • Move the contents of the pan to the side to create a well in the center. Pour in the eggs and slowly scraped the cooked bits off the bottom of the pan to scramble the eggs. Once the eggs are almost finished cooking, mix everything in the pan together.
  • Season the cauliflower with white pepper and soy sauce, give one last good mix to combine and serve with a garnish of sliced green onion.

2 lemons, juiced
½ cup heavy cream
5 tablespoons cold, unsalted butter, cut into cubes
salt to taste
cayenne pepper, to taste
2 tablespoons chopped fresh Italian parsley

Steps:

  • Place lemon juice in saucepan over medium heat; simmer until lemon juice reduces to less than a tablespoon and almost disappears, 4 or 5 minutes, being careful not to let it burn. Quickly add cream; whisk to combine. Continue to cook until cream reduces and is thick enough to coat the back of a spoon, 5 or 6 minutes. Reduce heat to low.
  • Whisk in 2 or 3 pieces of cold butter, stirring until butter melts before adding more. Add 2 or 3 more butter cubes. (If cream mixture cools too quickly, the sauce may break.) Continue adding butter a few pieces at a time until all butter is emulsified into the cream, 8 to 10 minutes. Add salt, cayenne pepper, and 2 generous tablespoons chopped parsley. Whisk until well blended. Keep sauce warm until ready to use.

My husband recently made this dish for a Scandinavian potluck. As strange a combination as it sounds, it's very tasty and was gobbled up by everybody at the event. Give it a try! This recipe is based on one from an excellent cookbook called "Eat the Norway," where they say: "Should you be invited to an informal evening get-together in Norway - sewing club, bridge party or the like - you may well be served this dish, particularly in late summer when Norwegian cauliflower is at its best."

2 1/2 cups cold water
1 lb fresh medium shrimp, in the shells
1 large cauliflower
2 tablespoons butter
3 tablespoons flour
1/2 cup half-and-half
1/4 teaspoon salt, to taste
1/4 teaspoon white pepper, to taste

Steps:

  • Peel and de-vein the shrimp, reserving the shells, and coarsely chop the shrimp meat into 1/2-inch sized pieces; then set the meat aside.
  • Place the reserved shrimp shells only (not the uncooked shrimp meat) in a stockpot together with the water; turn temperature to high and bring to a boil, then reduce to low, cover, and let simmer for 20 minutes.
  • While stock is simmering, break the cauliflower into small florets and steam until tender, about 15 minutes.
  • Strain shells from the stock and reserve the liquid.
  • Add flour to butter in a saucepan over medium heat and cook until golden.
  • Gradually stir in the shrimp stock and half and half and whisk together until thick.
  • Add salt and white pepper and stir well, then add the uncooked chopped shrimp and cook for about 5 minutes or until shrimp turns pink, careful not to overcook or the shrimp will toughen.
  • Remove from heat and pour the sauce over the steamed cauliflower in a large serving dish; serve with bread and a green salad.
  • Note: if you put the completed dish into a crockpot or other thermal container, it can also travel well to potlucks.

1 large cauliflower
2 cups milk
1/2 medium onion, minced
2 sprigs dill
4 tablespoons butter
4 tablespoons flour
1 teaspoon salt
1/4 teaspoon white pepper
2 cups cooked and shelled shrimp, chopped
1/4 cup heavy cream, whipped
12 cooked and shelled shrimp, whole
2 tablespoons minced dill

Steps:

  • Trim cauliflower, wash thoroughly and cook whole in boiling salted water. Meanwhile make sauce. Combine milk, onion and dill. Bring to a boil. Strain milk and keep hot. melt butter, stir in flour and cook 3 minutes, stirring constantly. Do not brown. Stir hot milk into mixture and cook, stirring constantly, until thickened and smooth. Cook 2 minutes longer. Season with salt and pepper. Add chopped shrimp and cook over low heat until heated through. Fold whipped cream into sauce. Place hot cauliflower on hot serving dish and pour sauce over it. Decorate with whole shrimp and dill.

My dear Aunt Alma gave me this recipe just after we were stationed overseas - for a taste of home. Cauliflower and shrimp are baked in a spicy cheese sauce. Adjust the amounts of spices to suit your taste. It is delicious as a main dish with buttered French bread or as a hearty side dish. Enjoy!

1 head cauliflower, broken into small florets
½ cup chopped onion
3 tablespoons butter
1 (10.75 ounce) can condensed Cheddar cheese soup
¼ cup whole milk
2 cups frozen fully cooked tiny salad shrimp, thawed
1 (4 ounce) can sliced mushrooms, drained
¼ cup chopped fresh parsley
1 pinch cayenne pepper
1 pinch ground black pepper
1 pinch Creole-style seasoning
paprika to taste

Steps:

  • Place the cauliflower in a large saucepan with just enough water to cover. Bring to a boil, and cook until fork tender, about 5 minutes. Drain, and coarsely chop or break up with a fork.
  • Preheat the oven to 350 degrees F (175 degrees C). Coat a large casserole dish with cooking spray.
  • Melt butter in a saucepan over medium heat. Cook onion in the butter until tender, but not browned. Stir in the Cheddar cheese soup, milk, shrimp, mushrooms and parsley. Season with cayenne pepper, black pepper, and Creole seasoning. Heat for a minute on low to blend the flavors.
  • Place the cauliflower into the prepared baking dish. Pour the contents of the saucepan over the cauliflower, and stir slightly to blend.
  • Bake for 20 minutes in the preheated oven, until bubbly. Sprinkle with paprika just before serving.

1 large head cauliflower
1 cup milk
1/2 medium onion, minced (or 1 tsp onion powder)
2 sprigs dill or 2 sprigs parsley
1/4 cup butter
1/4 cup flour
1 teaspoon salt
1/4 teaspoon white pepper
2 cups shelled cooked shrimp, chopped
1/4 cup heavy cream (whipped)
minced dill or parsley

Steps:

  • Trim cauliflower, wash thoroughly and cook whole till tender. ***Cook's Notes below.
  • While cooking cauliflower, make sauce. Combine milk, onion and dill (or parsley) sprigs & bring to a boil. Remove dill or parsley.
  • Melt butter, stir in flour; cook 2 minutes, stirring constantly. Do not let brown.
  • Add hot milk to mixture, stirring all the while. Continue to cook, stirring constantly, till mixture is thickened and smooth. Cook 2 minutes longer and season with salt & pepper.

  • Rapid cooking time of cauliflower not only reduces the odor but also preserves crispness, color, and reduces the loss of nutrients that will leach into the cooking water when overcooked.
  • To microwave cauliflower, cover a whole head of cauliflower with plastic wrap & microwave on high for 3 minutes, turn head over, and cook for an additional 2 to 4 minutes. Let stand for 3 minutes.
  • To steam cauliflower, place it in a steamer basket, and then place in a pot with 2 inches of water. Cover and steam. A whole head of cauliflower (1 ½ pounds) will take 15 to 20 minutes to cook, but begin checking for tenderness after 12 minutes.
