Categories     Egg     Fish     Herb     Onion     Breakfast     Brunch     Quick & Easy     Cream Cheese     Salmon     Summer     Chive     Dill     Bon Appétit

Yield Serves 4

Number Of Ingredients 9

8 large eggs
1 1/2 tablespoons chopped fresh dill or chives
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon butter
3/4 cup thinly sliced Vidalia onion
2 tablespoon cream cheese
Sour cream (optional)
3 ounces smoked salmon, cut into 1/2-inch-wide strips

Steps:

  • Whisk eggs, 1 tablespoon dill, salt and pepper to blend in large bowl. Melt 1 tablespoon butter in medium nonstick skillet over medium-high heat. Add onion and sauté until beginning to soften and color, about 3 minutes. Add egg mixture; reduce heat to medium and stir until eggs are barely set, about 2 minutes. Dot eggs with bits of cream cheese; continue cooking until eggs are softly set and cheese melts, about 2 minutes. Transfer to platter. Top with dollop of sour cream, if desired. Garnish with salmon. Sprinkle with remaining 1/2 tablespoon dill.

Tips:

  • Use high-quality ingredients. Fresh, organic eggs, creamy butter, and flavorful smoked salmon will make all the difference in the taste of your scrambled eggs.
  • Don't overcook the eggs. Scrambled eggs should be cooked until they are just set, but still slightly creamy in the center. Overcooked eggs will be tough and rubbery.
  • Season the eggs well. Salt and pepper are essential, but you can also add other spices and herbs to taste. Try smoked paprika, garlic powder, or fresh dill.
  • Serve the eggs immediately. Scrambled eggs are best when served hot and fresh out of the pan.

Conclusion:

Norwegian scrambled eggs with smoked salmon and potatoes is a simple but delicious dish that is perfect for breakfast, lunch, or dinner. It is easy to make and can be tailored to your own taste preferences. Whether you like your eggs creamy or well-done, with or without vegetables, this recipe is sure to please. So next time you're looking for a quick and easy meal, give Norwegian scrambled eggs a try.
