1 cup oat bran
1 cup all-purpose flour
1/4 cup plus 1 tablespoon sugar, divided
2 teaspoons baking powder
1/2 teaspoon salt
2 eggs
1 cup unsweetened applesauce
3 tablespoons canola oil
3 tablespoons fat-free milk
1/4 cup raisins
1/4 cup chopped walnuts
1/2 teaspoon ground cinnamon

Steps:

  • In a large bowl, combine the oat bran, flour, 1/4 cup sugar, baking powder and salt. In another bowl, beat the eggs, applesauce, oil and milk. Stir into dry ingredients just until moistened. Fold in raisins., Fill muffin cups coated with cooking spray three-fourths full. Combine the walnuts, cinnamon and remaining sugar; sprinkle over batter. Bake at 400° for 16-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing form pan to a wire rack. Serve warm.

3/4 cup brown sugar, packed
1 1/2 cups oat bran
1 1/2 cups flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 1/2 teaspoons cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
1/2 cup nuts (optional)
1/2 cup raisins (optional)
1 tablespoon vanilla
2 eggs
1 cup unsweetened applesauce, chilled
4 tablespoons vegetable oil

Steps:

  • Preheat oven to 400.
  • Line 12 muffin cups with paper liners, or grease muffin tins.
  • In a large bowl, mix together dry ingredients, including nuts & raisins if using.
  • In another bowl, mix together vanilla, oil, eggs & applesauce until well blended.
  • Make a well in the center of the dry ingredients; add wet ingredients & mix until well blended.
  • Let mixture sit for 10 minutes (for oat bran to absorb some of the liquid).
  • Spoon mixture into paper-lined muffin cups and bake 15-20 minutes or until golden brown & toothpick comes out clean.
  • Let muffins cool in pan for 5 minutes; then remove to a wire rack to cool completely.

3 cups oat bran
2 cups whole wheat flour
1 cup unbleached flour
1 tablespoon baking powder
1 tablespoon baking soda

4 eggs, beaten with a fork
1 cup honey

Steps:

  • Stir together dry ingredients.

3/4 cup all-purpose flour

2 eggs (or 4 egg whites)
1 cup applesauce, chilled
4 tablespoons yogurt (whatever flavor you like best)

Steps:

  • Preheat oven to 400. Line 12 muffin cups with paper liners or grease muffin cups. Blend together dry ingredients. In a separate bowl, combine eggs, applesauce and yogurt. 1 cup wheat bran
1/2 cup low fat buttermilk
1 large egg
2 tablespoons honey
3/4 teaspoon grated fresh ginger
1/2 teaspoon vanilla extract
1/2 cup plus 2 tablespoons flour
2 tablespoons ground flaxseed
1 1/4 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon ground allspice
1/4 cup plus 1 tablespoon old fashioned oats

Steps:

  • Preheat oven to 375 degrees. Coat muffin tin with cooking spray. Place applesauce and dates in a medium saucepan. Cook over medium heat, stirring frequently, until mixture is reduced to 1 1/4 cups, 15-20 minutes. Spread in an even layer on a rimmed baking sheet and let cool completely. Transfer to a large bowl, and stir in bran, buttermilk, egg, honey, ginger, and vanilla. Let stand for 10 minutes. Meanwhile, whisk together flour, flaxseed, baking soda, salt, allspice, and 1/4 cup oats. Stir into bran mixture. Sp[oon batter into prepared tins, filling to the brims. Sprinkel remaining 1 tablespoon oats over muffins. Bake until a toothpick inserted into center of 1 comes out clean, 21-23 minutes. Let cool completely in pans on wire racks.

Tips:

  • For a vegan version, use flax eggs instead of chicken eggs. To make a flax egg, combine 1 tablespoon of ground flaxseed with 3 tablespoons of water and let it sit for 5 minutes.
