This is my own adaptation of a recipe I found on the back of the oat bran box. These are also good with cinnamon sugar sprinkled on top before baking, and are especially yummy warmed up in the microwave about 10-15 seconds , with a little margarine!

OAT BRAN APPLESAUCE MUFFINS
These got top ratings from my brothers, the muffin maniacs. And they're made with honey and whole wheat flour, so my mom loved them too! They are golden on the outside, moist on the inside, and look and smell just like "bakery" bran muffins. Enjoy! The original recipe is from Hodgson Mill: I made a few changes (as I always do) in order to make them a bit healthier.

- If you don't have applesauce, you can substitute mashed banana or pumpkin puree. You can also use a combination of these ingredients.
- If you want a sweeter muffin, you can add up to 1/2 cup of sugar to the batter. You can also add a teaspoon of vanilla extract for extra flavor.
- To make gluten-free muffins, use gluten-free oat bran and gluten-free flour. You can also use a gluten-free baking mix.
- If you want a lower-carb muffin, you can use almond flour or coconut flour instead of all-purpose flour. You can also use a low-carb sweetener, such as stevia or erythritol.
- To make muffins with a streusel topping, combine 1/2 cup of brown sugar, 1/2 cup of all-purpose flour, and 1/2 cup of butter in a small bowl. Mix until the mixture is crumbly. Sprinkle the streusel topping over the muffin batter before baking.
