Provided by á-48465

Number Of Ingredients 10

1 cup instant (quick-cook) oats
3/4 cups whole wheat flour
1 1/2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/8 teaspoon salt
2 tablespoons coconut oil, melted
1 egg, room temperature
1 teaspoon vanilla extract
1/2 cup honey
1/4 cup dried blueberries

Steps:

  • In a medium bowl, whisk together the oats, flour, baking powder, cinnamon, and salt. In a separate bowl, whisk together the coconut oil, egg, and vanilla. Stir in the honey until thoroughly incorporated. Add in the flour mixture, stirring just until incorporated. Fold in the blueberries. Chill the dough for at least 30 minutes. (If chilling longer, cover with plastic wrap, ensuring it touches the entire surface of the cookie dough.) Preheat the oven to 325°F, and line a baking sheet with parchment paper or a Silpat. Drop the cookie dough into 15 rounded scoops on the baking sheet. (If chilled longer than 1.5 hours, flatten each slightly.) Bake at 325°F for 13 to 15 minutes. Cool on the baking sheet for at least 15 minutes before turning out onto a wire rack.

Tips:

  • For a crispier cookie, chill the dough for at least 30 minutes before baking.
  • If you don't have a mixer, you can cream the butter and sugar together by hand using a wooden spoon or spatula.
  • Be careful not to overmix the dough, as this will make the cookies tough.
  • If you want larger cookies, increase the baking time by a few minutes.
  • Store the cookies in an airtight container at room temperature for up to 3 days, or freeze them for up to 2 months.

Conclusion:

These oatmeal blueberry cookies are a delicious and easy-to-make treat that are perfect for any occasion. They are soft and chewy, with a sweet and tangy flavor. The blueberries add a burst of color and flavor to the cookies, and the oatmeal gives them a hearty and satisfying texture. Whether you enjoy them warm from the oven or store them in the freezer for later, these cookies are sure to be a hit with everyone who tries them.
