QUAKER OATMEAL PRIZE WINNING MEAT LOAF image

Categories     Beef     Roast     Quick & Easy     High Fiber

Yield 6 to 8 People

Number Of Ingredients 9

1-1/2 pounds lean ground beef or turkey
3/4 cup Quaker® Oats
3/4 cup finely chopped onion
1/2 cup catsup
1 egg, lightly beaten
1 tablespoon Worcestershire sauce
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Heat oven to 350°F. Combine all ingredients in large bowl; mix lightly but thoroughly. Bake 50 to 55 minutes or until meatloaf is to medium doneness (160°F for beef, 170°F for turkey), until not pink in center and juices show no pink color. Let stand 5 minutes before slicing. As good as the meatloaf is, it would not be complete without the sauce. Mom formed the mixture into a loaf and placed it in the middle of a roast pan to cook. Twenty minutes before it was done, the grease/liquid was drained off. She then covered the meatloaf with 1/2 cup of grated onion, followed by 1 cup of (Heinz) ketchup mixed with 4T of brown sugar, 4T vinegar, 2T Worchestershire Sauce; heated mixed ingredients but did not boil. I always make a double batch to spoon over each piece. Cover and refrigerate leftovers promptly and use within 2 days, or wrap airtight and freeze up to 3 months.

CORNMEAL-OATMEAL CRANBERRY-ORANGE LOAF

Cornmeal-Oatmeal Cranberry-Orange Loaf image

My husband, being a true Texan, loves cornbread almost as much as he loves me. I was not a great cornbread baker, so I bought The Cornbread Gospels by Crescent Dragonwagon to learn how to make his tummy happy, and what a great book that turned out to be. Every form and fashion of cornbread you can imagine, and (almost) all good. This recipe is from that book, and has earned rave reviews everywhere I have taken it. It's beautiful, and the essences of orange and cranberry combined with the crunchiness of stone ground cornmeal sets it apart from other quick breads, and it will leaving you wanting more. I hope you like it as well as we do.

Categories     Quick Breads

Time 1h15m

Yield 1 large loaf, 8-10 serving(s)

Number Of Ingredients 12

1 1/2 cups unbleached all-purpose flour
1/3 cup stone-ground yellow cornmeal
1 teaspoon baking powder
1/4 teaspoon baking soda
3/4 cup plus 2 tablespoons sugar
2 eggs
3 tablespoons canola oil
1/2 cup plus 2 tablespoons buttermilk
2 finely grated oranges, zest of
1 cup fresh cranberries, coarsely chopped
4 tablespoons walnuts, toasted and chopped
1/4 cup rolled oats

Steps:

  • Preheat the oven to 350. Coat 1 large, 2 medium, or 3 small loaf pans with oil.
  • Soft the flour, cornmeal, baking powder, baking soda, sugar, and salt into a large bowl.
  • Whisk together the eggs, oil, buttermilk, and orange zest in a second, smaller bowl.
  • In a food processor, pulse the cranberries a few times until they are roughly chopped. Combine the mix-ins--the cranberries, walnuts, and oatmeal--in a third bowl. Sprinkle 1 tablespoon of the flour mixture over them, and toss well.
  • Quickly combine the flour mixture and the egg mixture, using as few strokes as possible. Gently stir in the mix-ins. The batter should be stiff. Spoon the batter into the prepared pan(s). Bake for 45 to 55 minutes for the large pan, 35 to 50 minutes for the mediums, and 35 to 40 minutes for the smalls. Check two-thirds of the way through the baking period; if the loaves are browning excessively, tent them loosely with foil.
  • Let the baked breads cool for 10 minutes in the pan(s), run a thin knife around the edge of each pan, and turn the loaves out. Let finish cooling on a rack.
  • NOTE: When using cirtrus zest, try your best to get organic fruit, because it is free of the waxes and fungicides that are routinely sprayed on conventionally grown citrus fruit peels.

Categories     Quick Breads

Time 1h20m

Yield 1 loaf

Number Of Ingredients 15

1 cup quick-cooking oats
1 cup finely chopped dates
1 cup chopped raisins
1 cup chopped pecans
1 1/2 cups hot milk
1 teaspoon vanilla extract
2 eggs, beaten
1/2 cup pumpkin
2 cups all-purpose flour
3/4 cup sugar
1 tablespoon baking powder
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg

Steps:

  • Combine oats, dates, raisins, pecans, and milk; mix well, and let stand 10 minutes. Stir in vanilla, eggs, and pumpkin.
  • Combine remaining ingredients; mix well, and gradually stir into oat mixture. Spoon into a greased and floured 9X5X3 inch loaf pan; bake at 350 degrees about 65 minutes or until a wooden pick inserted in center comes a clean. Cool on wire rack.

Tips:

  • Use quick-cooking oats: Quick-cooking oats will cook more quickly and evenly in the loaf, resulting in a lighter and fluffier texture.
  • Use ripe bananas: Ripe bananas are sweeter and will add more flavor and moisture to the loaf.
  • Don't overmix the batter: Overmixing the batter will make the loaf tough. Mix just until the ingredients are combined.
  • Bake the loaf in a loaf pan lined with parchment paper: This will help to prevent the loaf from sticking to the pan.
  • Let the loaf cool completely before slicing: This will help to prevent the loaf from crumbling.

Conclusion:

Oatmeal loaf is a delicious and healthy breakfast or snack option. It is easy to make and can be customized to your liking. With its combination of oats, bananas, and spices, oatmeal loaf is a nutritious and satisfying choice that is sure to please everyone.
