These bars are a great holday dessert, but could be enjoyed any time of the year. I have to confess, I love mincemeat but I am not a pie crust maker so I created these for the mincemeat taste but SO easy! My

Tips:
- Use rolled oats for a chewier cookie, or quick oats for a crispier cookie.
- If you don't have any mincemeat, you can make your own by combining 1 cup chopped dried fruit (such as raisins, cranberries, or currants), 1/2 cup chopped nuts (such as pecans, walnuts, or almonds), 1/2 cup brown sugar, 1/2 teaspoon ground cinnamon, 1/4 teaspoon ground nutmeg, and 1/4 teaspoon ground cloves.
