Family history has it, that during the Civil War, since pecans were in short supply in the South, oatmeal was substituted for the traditional pecan pie and the results were astonishing. Now served at every family gathering since that time.

4 eggs
1 cup sugar
2 tablespoons flour
1 teaspoon ground cinnamon
1/4 teaspoon salt
1 cup light corn syrup
1/8-1/4 cup melted butter
1 teaspoon vanilla
1 cup quick-cooking oatmeal (uncooked)

Steps:

  • Preheat oven to 350°F.

4 large eggs
1/4 cup granulated sugar
3/4 cup light brown sugar, packed
2 Tablespoons all-purpose flour
1 teaspoon ground cinnamon
1 cup light corn syrup
1/4 cup salted butter, melted
1 1/2 teaspoon vanilla extract
1 cup quick cooking oats

Steps:

  • Preheat the oven to 350F degrees.
  • Place the pie crust in a pie plate and flute edges if desired, set aside.
  • With a hand mixer beat eggs until light and fluffy.
  • Add in the granulated sugar, brown sugar, flour, cinnamon and beat until well combined.
