Steps:
- Brown sausage in butter in a frying pan then place in a 1 1/2-2 quart dutch oven or casserole dish.
- Arrange onion, sauerkraut, apples and potatoes around sausage (draining only 1 can of sauerkraut). Top with apple juice and salt and pepper to taste.
- If using dutch oven, cover tightly and simmer over low heat, stirring once, for 30 to 40 minutes or until potatoes are tender. If using oven, bake at 350 for 45 mins to 1 hours until potatoes are tender.
- Garnish with a sprinkle of fresh parsley if desired and serve.
Tips:
- Choosing the Right Sausage: Opt for a good quality, fully cooked bratwurst or kielbasa sausage for an authentic Oktoberfest experience.
- Sauerkraut Preparation: Rinse and drain the sauerkraut thoroughly to remove any excess acidity. For a tangier flavor, consider using a sauerkraut blend with caraway seeds.
- Apple Selection: Choose firm, sweet apples like Granny Smith or Honeycrisp for a crisp and refreshing contrast to the richness of the sausage and sauerkraut.
- Mustard and Beer Pairing: Experiment with different mustards to find your favorite. A classic German mustard or a spicy brown mustard pairs well with the sausage. Serve with a German beer like a Helles or a Märzen for a complete Oktoberfest experience.
- Cooking the Sausage: Whether you choose to grill, pan-fry, or boil the sausage, ensure it is cooked thoroughly before serving. Grilling imparts a smoky flavor, while pan-frying results in a crispy exterior.
- Serving Suggestions: Serve the sausage and sauerkraut with mashed potatoes, roasted potatoes, or a side of warm, crusty bread for a hearty and satisfying meal.

This delectable Oktoberfest Sausage Dinner in a Dish captures the essence of the festive German celebration.
