Goya is a gourd that is bitter by itself but the egg and spam reduce the bitterness and it WORKS!!! If you have seen it around but don't know what to do with it, try this. There are many healthy properties in the goya.

Steps:
- Cook bacon in wok or saucepan on high heat. Remove bacon and leave grease.
- Lightly salt goya, let sit for 3 minutes. Add sliced goya to heat and grease and cook about 3-5 minutes, or until slightly flimsy.
- Add tofu and cook til just browning.
- Add egg and cook til done.
- Serve with soy sauce and cooked cabbage if desired.

KIMCHI GOYA CHAMPURU
This is the simplest way to cook goya champuru, the famous Okinawa food made from bitter melon and atsuage (deep-fried tofu).

Steps:
- Soak bitter melon in a bowl of lightly salted water for 5 minutes. Drain.
- Combine drained bitter melon, tofu, luncheon meat, kimchi, and mochi in a microwave-safe bowl.
- Whisk eggs, mayonnaise, sesame oil, soy sauce, and chicken stock powder together in a separate bowl. Pour over the bitter melon mixture. Cover bowl with a microwave-safe cover.
- Microwave at 600W until eggs are set, about 6 minutes. Stir together.
