1 tablespoon Dijon mustard
1 tablespoon Worcestershire sauce

  • For the glaze: In a small bowl, combine the barbecue sauce, brown sugar, apple cider vinegar and sriracha.

Provided by Betsy Carter

Categories     Dinner

Time 1h20m

Yield 6 servings

Number Of Ingredients 14

1 tablespoon olive oil, plus more for greasing
1 large yellow onion, diced
3 cloves garlic, minced
2 tablespoons tomato paste
1 cup panko breadcrumbs
1 cup whole milk
2 lb ground beef
2 large eggs, beaten
½ cup fresh parsley, roughly chopped
1 tablespoon worcestershire sauce
½ teaspoon dried thyme
1 tablespoon kosher salt
1 teaspoon freshly ground black pepper
½ cup ketchup

Steps:

  • Preheat the oven to 350°F (180°C). Line a rimmed baking sheet with foil.
  • Heat the olive oil in a large pan over medium-high heat. Once the oil begins to shimmer, add the onion and cook, stirring often, until softened and golden brown, about 7 minutes. Add the garlic and cook, stirring constantly, until aromatic, about 1 minute. Add the tomato paste and cook, stirring often, until the tomato paste turns deep red in color, about 2 minutes. Remove the pan from the heat and let the onion mixture cool to room temperature.
  • In a large bowl, stir together the panko and milk. Add the ground beef, eggs, parsley, Worcestershire sauce, thyme, salt, pepper, and the onion mixture and use your hands to combine. Do not overmix!
  • Shape the beef mixture into a 10 x 5-inch loaf on the prepared baking sheet. Brush the top and sides with ketchup.

Tips:

  • Use a flavorful ground beef blend. A combination of ground chuck, ground sirloin, and ground brisket works well.
  • Don't overmix the meatloaf mixture. Overmixing can make the meatloaf tough.
  • Add moisture to the meatloaf mixture. This can be done with eggs, milk, or broth.
  • Season the meatloaf mixture well. Use a variety of spices and herbs, such as garlic, onion, paprika, and thyme.
  • Bake the meatloaf at a high temperature for a short amount of time. This will help to create a crispy crust and a juicy interior.
  • Let the meatloaf rest before slicing. This will help to keep the juices in.

Conclusion:

Oklahoma meatloaf is a hearty and flavorful dish that is perfect for a family meal. It is easy to make and can be customized to your own taste. Whether you like it with ketchup, brown sugar, or BBQ sauce, Oklahoma meatloaf is sure to be a hit.
