Number Of Ingredients 11

3 shallots, finely diced
2 garlic cloves, finely chopped
1-inch (2.5 cm) piece of ginger, peeled and finely chopped
1 cinnamon stick
1 cup (100 g) old-fashioned rolled oats
½ cup (30 g) coconut flakes, roughly chopped
3 tablespoons toasted white sesame seeds
3 tablespoons red chile flakes
1½ cups (375 ml) vegetable or other neutral oil
2 tablespoons toasted sesame oil
About 1 tablespoon sea salt

Steps:

  • To make the chili crisp, place the shallots, garlic, ginger, cinnamon stick, oats, coconut flakes, sesame seeds, chile flakes and oils in a saucepan over medium heat. Bring to a gentle simmer, swirling the pan every now and then, then reduce the heat to medium-low and cook for 20-25 minutes until everything is crispy.
  • Strain the oil through a sieve over a bowl and leave the oat mixture to cool in the sieve-this will allow it to crisp up further. Set the oil aside. Once the crispy oat mixture is completely cool, stir it back into the oil and season with the sea salt. Leave the cinnamon stick in the oil, as it will continue to flavor it. Store the chili crisp in a sterilized jar. It will keep well for several months.

Through the years I have always made peanut brittle, but when my hubby could no longer have peanuts, I replaced them with cashews. This is one of my biggest requests at Christmas. It makes a nice thank-you gift as well and is a hit at bake sales.

OLD FASHIONED CORNFLAKE CANDY RECIPE - (3.9/5)

Old Fashioned Cornflake Candy Recipe - (3.9/5) image

Provided by á-10966

Number Of Ingredients 4

1 cup sugar
1 cup light corn syrup
1 cup peanut butter
6 cups Corn Flakes

Steps:

  • In a medium size saucepan, heat the corn syrup and sugar, on medium heat, until the sugar dissolves. Add peanut butter and stir until smooth. Gradually add corn flakes, 1 cup at a time, while mixing. Remove from heat, then spoon mixture onto wax paper, or aluminum foil, and let cool completely. **The official recipe calls for 6 cups of corn flakes, but you can use anywhere from 4-6 cups depending on how much you'd like to make and how crunchy or "gooey" you'd like your candy {use more cornflakes for more crunch}. For these pictures, we only used 4 cups of corn flakes, so keep that in mind when making yours.

PEANUT BRITTLE

Peanut Brittle image

My Aunt Joyce taught my mother how to make this and she taught me.

Provided by Gina

Categories     Desserts     Nut Dessert Recipes     Peanut Dessert Recipes

Yield 15

Number Of Ingredients 5

1 cup raw Spanish peanuts
1 cup white sugar
½ cup light corn syrup
½ cup water
1 teaspoon baking soda

Steps:

  • Lay out several sheets of foil to spoon the hot peanut brittle onto.
  • In a large skillet mix the sugar, syrup, and water together. Cook at a medium-high heat, stirring regularly. Heat until the mixture has a hard ball consistency. Heat to 250 to 265 degrees F (121 to 129 degrees C), or until a small amount of syrup dropped into cold water forms a rigid ball. If you don't own a candy thermometer, occasionally hold spoon above mixture, allowing it to drip off spoon. When mixture is at hard ball stage, it will 'hair' off the spoon when falling, looking like a clear spider web.
  • Once mixture is at hard ball consistency, add raw peanuts. (They will pop a little.) When mixture starts to turn a light clear-brown, as if it's starting to burn, remove from stove. Add soda and stir. Mixture will foam up.
  • Spoon out bite-size pieces onto unbuttered foil, stirring constantly between each couple of pieces. Mixture can also be poured onto unbuttered foil as one big piece and broken into smaller pieces once cooled.

Tips:

  • Use fresh coconut flakes. Fresh coconut flakes will give your brittle a more intense coconut flavor. If you can't find fresh coconut flakes, you can use unsweetened dried coconut flakes. Just be sure to soak them in hot water for about 10 minutes before using them to soften them up.
  • Don't overcook the sugar mixture. The sugar mixture should be cooked until it reaches the hard-crack stage, which is about 300 degrees Fahrenheit. If you overcook the sugar mixture, it will become too hard and brittle.
  • Be careful when handling the hot sugar mixture. Hot sugar can cause severe burns, so be sure to wear oven mitts and eye protection when you're working with it.
  • Work quickly when pouring the sugar mixture onto the baking sheet. The sugar mixture will start to set quickly, so you need to work quickly to get it spread out evenly.
  • Let the brittle cool completely before breaking it into pieces. The brittle will be very hot when it comes out of the oven, so be sure to let it cool completely before breaking it into pieces.

Conclusion:

Coconut flake brittle is a delicious and easy-to-make candy that is perfect for any occasion. With just a few simple ingredients, you can create a sweet and crunchy treat that everyone will love. So next time you're looking for a quick and easy dessert, give coconut flake brittle a try. You won't be disappointed!
