1 (10-pound) smoked ham with rind, preferably shank end
1 cup unsweetened apple juice or apple cider
1/2 cup whole grain Dijon mustard
2/3 cup (packed) golden brown sugar
1/4 cup honey

Steps:

  • Preheat oven to 325°F. Place ham in large roasting pan. Pour apple juice over ham. Drizzle honey evenly over. Bake until ham is well glazed, spooning any mustard and sugar glaze that slides into roasting pan back over ham, about 30 minutes. Transfer ham to serving platter; let cool at least 45 minutes. Slice ham and serve slightly warm or at room temperature.

PAULA DEEN'S OLD-FASHIONED HOLIDAY GLAZED HAM

Paula Deen's Old-Fashioned Holiday Glazed Ham image

This is a Paula Deen classic made with a spiral-sliced ham coated with a brown sugar/mustard glaze and then covered with pineapple rings, maraschine cherries and cloves. I found this in the December 2009 Food Network Magazine. Note: I am guessing on the size of the jar for the maraschino cherries. The recipe just calls for a small jar.

  • Choosing the right ham: Opt for a bone-in ham as it retains moisture and flavor better during cooking.
  • Preparing the ham: Remove the ham from the refrigerator about an hour before cooking to allow it to come to room temperature.
  • Scoring the ham: Score the ham's surface in a diamond pattern to help the glaze penetrate and enhance flavor.
  • Glazing the ham: Use a flavorful glaze made with ingredients like honey, brown sugar, mustard, and spices to give the ham a beautiful crust and extra taste.
  • Cooking the ham: Cook the ham in a preheated oven at the recommended temperature and time, basting it occasionally with the glaze to keep it moist and caramelized.
  • Resting the ham: Let the ham rest for about 15 minutes before carving to allow the juices to redistribute, resulting in more tender and flavorful meat.
