1 recipe pastry for a 9 inch double crust pie
4 cups elderberries
1 cup white sugar
3 tablespoons cornstarch
1 tablespoon lemon juice

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Mix cornstarch in a little bit of water and add to berries and sugar. Cook, stirring constantly until desired thickness. Add more cornstarch if not thick enough. Add lemon juice.
  • Pour into bottom crust. Dot with butter. Put on top crust or make a lattice.
  • Bake at 375 degrees F (190 degrees C) until browned and berries are bubbling through holes in the crust, approximately 40 minutes.
  • Note: It is a good idea to put a pan or foil under the pie as it bakes since it might bubble over.

This simple old fashioned elderberry pie comes together with just a few ingredients, and it's a real crowd pleaser

2 1/4 cups flour
1 cup butter
1/2 tsp salt
4 to 6 tbsp water, cold
4 cups elderberries, stemmed
1 cup sugar
3-4 tbsp corn starch
(or tapioca starch)
2 tbsp lemon juice
1/2 cup water (see note)

Steps:

  • Prepare the pie crust by mixing flour and salt (with a tbsp of sugar if desired) and then cutting the butter into the flour mixture until crumbly. Add water and bring the mixture together into a cohesive mass. Divide into two pieces, wrap and refrigerate.
  • Clean and stem the elderberries.
  • Place the sugar, cornstarch and water in a saucepan large enough to hold all the filling. Bring the mixture to a boil, stirring to dissolve.
  • Add elderberries and lemon juice and cook another 2-3 minutes until heated through. Set aside to cool slightly while you prepare the crust.
  • Remove one half of the crust from the refrigerator, roll it out and use it to line a pie pan.
  • Fill the crust with the elderberry pie filling, and then top with the second half of the crust (as a lattice top or solid top pie).
  • Seal the edges, and optionally, pain the top with milk or egg white for a golden crust. A sprinkle of sugar on top is also a nice decorative touch.
  • Bake at 425 for 30 minutes and then reduce the oven temperature to 350 for an additional 20 to 30 minutes until the crust is browned and filling bubbly.

½ cup packed light brown sugar
1 teaspoon ground cinnamon
3 cups elderberries
¼ cup seedless grapes
1 tablespoon cider vinegar
2 tablespoons unsalted butter
2 tablespoons all-purpose flour

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C).
  • Combine the flour, sugar, and cinnamon; reserve 1/4 of this mixture. Add the remaining 3/4 flour mixture to the elderberries and grapes, and mix thoroughly. 2 (9 inch) deep-dish prepared pie crusts
4 cups fresh elderberries, stemmed
1 cup water
1 cup white sugar
3 tablespoons water
3 tablespoons cornstarch
1 tablespoon orange juice

  • Preheat oven to 350 degrees F (175 degrees C).
  • Unroll 1 crust and press firmly against the side and bottom of an ungreased 9-inch pie plate. Prick bottom and sides with a fork.

1 1/4 cups sugar
6 tablespoons flour
2 tablespoons lemon juice
1/2 teaspoon cinnamon

1 tablespoon grated fresh lemon rind

1/8 tsppinch of natural unsweetened cocao
3/4 c instant tapioca

  • Let sit overnight in refrigerator Remove from refrigerator, add 1 tbsp butter in small bits Let stand for 30 minutes. Preheat oven to 400º Line 2 9" pie plates with crust Divide the elderberry mix equally into the 2 shells Cover top with lattice crust or create your own design. Have fun. Bake at 400º for ten minutes. Reduce heat to 350º, bake 30-40 minutes longer. Cool thoroughly on rack, then in refrigerator.

4 cups fresh blueberries or 4 cups frozen blueberries
2/3 cup sugar
2 tablespoons cornstarch
2 tablespoons fresh lemon juice
1 (9 inch) double crust pie crusts
1 tablespoon butter
2 tablespoons cream or 2 tablespoons milk

  • Preheat the oven to 400°F.
  • Rinse and drain the fresh blueberries or drain the frozen blueberries. Set aside.
  • In a bowl, combine the sugar and cornstarch and mix well until all the lumps disappear. Add the blueberries and lemon juice. Toss to combine.
  • Roll out half of the dough and fit it into a 9-inch pie pan. Fill with the blueberry mixture. Dot with butter. Roll out the remaining dough. Moisten the edge of the bottom crust with water. Fit top crust over the filled pie. Trim and crimp edges. Make 2 or 3 vent holes in the top crust.
