Tips:

  • Choose the right potatoes: Russet potatoes are the best choice for potato bread, as they have a high starch content and will produce a light and fluffy loaf. Yukon Gold potatoes can also be used, but they will result in a denser bread.
  • Cook the potatoes thoroughly: Be sure to cook the potatoes until they are very soft, as this will help them to break down and create a smooth dough. You can boil, steam, or bake the potatoes, but boiling is the easiest method.
  • Use a potato ricer: A potato ricer is the best tool for mashing the potatoes, as it will produce a smooth and fluffy puree. If you don't have a potato ricer, you can also use a food processor or a fork, but the results will not be as good.
  • Add the mashed potatoes to the dough while it is still warm: This will help the potatoes to blend in with the dough more easily and will prevent the dough from becoming too stiff.
  • Let the dough rise in a warm place: The dough should rise in a warm place until it has doubled in size. This will take about 1 hour.
  • Bake the bread at a high temperature: The bread should be baked at a high temperature (400 degrees Fahrenheit) for the first 15 minutes, and then the temperature should be reduced to 350 degrees Fahrenheit for the remaining baking time. This will help to create a crusty exterior and a soft and fluffy interior.
