Tips:

  • Choose high-quality pork: Select pork with a good fat-to-lean ratio, around 80% lean to 20% fat, for a flavorful and juicy sausage.
  • Use fresh herbs and spices: Fresh herbs like sage, thyme, and rosemary, along with spices like black pepper, garlic powder, and paprika, contribute to the aromatic and savory flavor of the sausage.
  • Grind the pork coarsely: Coarsely grinding the pork ensures a better texture and prevents the sausage from becoming too dense.
  • Mix the ingredients thoroughly: Mix the ground pork, herbs, spices, and seasonings until they are evenly distributed, ensuring a cohesive and flavorful sausage mixture.
  • Stuff the sausage casings evenly: Stuff the sausage casings evenly to avoid air pockets and ensure uniform cooking.
  • Prick the sausage casings: Pricking the sausage casings with a toothpick or fork allows steam to escape during cooking, preventing the casings from bursting.
