HERB TOASTS
These toasts are nice with dips and I also serve them with soups. Pita bread is a good substitute; they are smaller so use a few extra. This also works with tortillas, but then you don't split them.

HERB TOAST
This toast is great to serve with soup or salad. You can use up your older loaves of bread with this recipe, as long as they're not completely dried up. Prep time does not include the 'butter softening time'.

Steps:
- Preheat oven to 350 degrees. Line a baking sheet with a Silpat baking mat; set aside. In a small bowl, combine parsley, thyme, rosemary, salt, pepper, and oil.
- Spread bread slices with garlic, then brush with herb mixture. Place in a single layer on prepared baking sheet, and bake until crisp and edges are beginning to brown, 10 to 12 minutes.
Tips:
- Choose the right bread: A sturdy bread like a baguette or sourdough will hold up well to the toppings and won't get soggy.
- Don't skimp on the butter: The butter helps the toppings adhere to the bread and adds a rich flavor.
- Use fresh herbs: Fresh herbs will give your toasts the best flavor. If you don't have fresh herbs on hand, you can use dried herbs, but use about half the amount.
- Don't overload the toasts: You want to be able to taste all of the flavors, so don't pile on too many toppings.
- Toast the bread until it's crispy: This will help the toasts stay crispy and prevent them from getting soggy.
Conclusion:
Olive and herb toasts are a delicious and easy appetizer or snack that can be made with a variety of toppings. They're perfect for any occasion, from a casual get-together to a fancy party. So next time you're looking for something to serve, give olive and herb toasts a try. Your guests will love them!
