OMURICE

My take on the popular Japanese home-cooking dish, omurice. It can also be made with demi-glace instead of ketchup. Garnish with additional ketchup.

Time 30m

Yield 2

Number Of Ingredients 11

¼ cup ketchup
1 ½ teaspoons memmi soup base
1 teaspoon mirin (Japanese sweet wine)
1 teaspoon butter
¼ cup minced onion
4 ounces skinless, boneless chicken breasts, cut into bite-sized pieces
⅓ cup diced mixed vegetables (such as carrots, celery, and bell peppers)
salt and ground black pepper to taste
1 cup cooked white rice
4 eggs, divided
2 tablespoons milk, divided

Steps:

  • Mix ketchup, memmi, mirin together in a small bowl.
  • Melt butter over medium-high heat in a frying pan. Stir-fry onion in the butter until translucent, about 5 minutes. Add chicken, vegetables, and 1/2 the ketchup mixture. Sprinkle with salt and pepper to taste. Stir in cooked rice and remaining ketchup mixture. Stir-fry until rice is coated and chicken is no longer pink in the center, 5 to 7 minutes. Divide fried rice mixture between 2 plates and mold each into compact, oblong shapes.
  • Whisk 2 eggs and 1 tablespoon milk for 1 omelet together in a small bowl. Heat a nonstick pan over medium heat.
  • Pour beaten egg mixture into the hot pan; let cook for 30 seconds. Lift the edges of the omelet so that the uncooked egg runs under the cooked edges and comes into contact with the hot skillet. Shake and tilt the skillet to move the uncooked egg. Repeat until the top is set, about 2 to 3 minutes. Lay the omelet on top of 1 fried rice mixture and tuck under. Repeat with remaining 2 eggs and 1 tablespoon milk for the second omelet; lay over remaining fried rice mixture and tuck.

MY OMURICE

My Omurice image

We found Japanese omurice when searching for a new Meatless Monday dish. I made it my 'Om' by adding more veggies. In Minnesota it is common to have ketchup with your eggs, but if that seems odd, just try it, the flavors go really well together.

Categories     Egg

Yield 1 person

Number Of Ingredients 10

1 1/2 cups of cooked rice
2 eggs
1/2 onion, diced
2 garlic cloves, minced
1/4 cup canned corn
1/2 lb. chicken breast (cut into cubes)
1 tablespoon Pasta Sauce
4 tablespoon ketchup
Salt & Pepper for seasoning
Vegetable Oil

Steps:

  • Heat vegetable oil in a large skillet and saute chicken. Add onion, garlic and corn in the skillet and saute together until softened. Add steamed rice in the pan and stir-fry together. Sprinkle some salt and pepper. Stop the heat and add ketchup and pasta sauce and mix well. Set the seasoned rice aside. Heat about 1 tsp of vegetable oil in a large skillet. Beat two eggs in a small bowl and pour the egg in the skillet. Quickly spread the egg and make a round omelet. Place 1/4 of the seasoned rice in the middle of the omelet and fold top and bottom sides of omelet over the rice. Cover the frying pan with a plate and carefully turn them over to place the omerice on the plate. Repeat this process to make four omelet rice. Put some ketchup on top of omurice just before serving.

Tips:

  • Use high-quality ingredients: Fresh, flavorful ingredients will make a big difference in the final dish.
  • Cook the rice perfectly: The rice should be cooked until it is tender but still has a slight bite to it.
  • Season the rice well: Don't be afraid to add plenty of salt and pepper to the rice. This will help to bring out the flavor of the other ingredients.
  • Make sure the eggs are cooked to your liking: Some people like their eggs runny, while others prefer them to be more well-done. Cook the eggs until they reach your desired doneness.
  • Use a good quality cheese: The cheese should be flavorful and melty. Cheddar, mozzarella, and Parmesan are all good choices.
  • Serve the omurice immediately: Omurice is best served hot and fresh. If you let it sit for too long, the rice will become dry and the eggs will become tough.

Conclusion:

Omurice is a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. It is easy to make and can be tailored to your own taste preferences. With a little practice, you can make omurice that is sure to impress your friends and family.
