Time 2h30m

Yield 20

Number Of Ingredients 6

2 (.25 ounce) packages active dry yeast
3 tablespoons white sugar
2 ½ cups warm water (110 degrees F/45 degrees C)
3 tablespoons lard, softened
1 tablespoon salt
6 ½ cups bread flour

Steps:

  • In a large bowl, dissolve yeast and sugar in warm water. Stir in lard, salt and two cups of the flour. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes.
  • Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour.
  • Deflate the dough and turn it out onto a lightly floured surface. Divide the dough into two equal pieces and form into loaves. Place the loaves into two lightly greased 9x5 inch loaf pans. Cover the loaves with a damp cloth and let rise until doubled in volume, about 40 minutes.
  • Preheat oven to 425 degrees F (220 degrees C).
  • Bake at 375 degrees F (190 degrees C) for about 30 minutes or until the top is golden brown and the bottom of the loaf sounds hollow when tapped.

The One Loaf White Bread recipe provides a detailed guide to making a classic white bread loaf. The recipe includes essential tips to ensure a successful baking experience and achieve the perfect loaf of bread. Here's a summary of the tips and a conclusion:

Tips:

  • Activate the Yeast: Always check the expiration date of the yeast and follow the instructions on the package for activation. If using active dry yeast, dissolve it in warm water with a pinch of sugar to activate it before adding to the dough.
  • Proper Dough Temperature: Ensure the dough temperature remains between 78-82°F (25-28°C) during the rising process. This ideal temperature range allows for optimal yeast activity and a well-risen dough.
  • Kneading the Dough: Kneading the dough develops gluten, which gives the bread its structure and texture. Knead for 6-8 minutes by hand or 3-4 minutes using a stand mixer until the dough becomes smooth and elastic.
  • First Rise: Let the dough rise in a warm, draft-free place until it doubles in size. This usually takes about 1-1.5 hours, depending on the temperature and humidity.
  • Shaping the Dough: Once the dough has risen, punch it down to release any air bubbles. Divide it into two equal portions and shape them into loaves. Place the loaves in greased loaf pans and let them rise again for 45-60 minutes.
  • Baking the Bread: Preheat the oven to 375°F (190°C) and bake the bread for about 40-45 minutes or until the crust is golden brown and the internal temperature reaches 200°F (93°C).
  • Cooling the Bread: After baking, remove the bread from the pans and let it cool on a wire rack for at least 1 hour before slicing and serving.
