LINDY'S BACON AND ONION CHEESE SPREAD

Lindy's Bacon and Onion Cheese Spread image

This is a wonderful bacon and onion cheese spread (not dip) that is great for parties and year-round use. For Christmas, I shape this into a tree shape, on a flat tray. I sprinkle the trunk of the tree with crisp bacon and the tree itself with finely chopped green onion tops or chives. I have also shaped it into a cross for my children's confirmation parties, a Christmas stocking, and even a heart for a special Valentine's Day party. If you substitute creamy salad dressing for the mayonnaise it will not be the same. My mom tried that and it didn't turn out well. This is best made the day before and chilled. My family and friends all love this; it's one of those dishes that I have to make for every holiday and get-together.

BACON-BLUE CHEESE SANDWICHES

Bacon-Blue Cheese Sandwiches image

Onion jam, which is reason enough to try this sandwich, is simple to make (see the recipe for BLAAK Onion Jam at beekman1802.com, which also sells the jam by the jar). Although any blue cheese is delicious here, look for one that's sliceable or crumbly, not gooey. Stilton, Maytag, and Roaring Forties are good choices.

  • Use high-quality cheese: The cheese is one of the star ingredients in this sandwich, so it's important to use a good quality cheese that melts well. Cheddar, mozzarella, and Gruyère are all good choices.
  • Don't be afraid to experiment with different toppings: In addition to the onions and bacon, you can also add other toppings to your sandwich, such as sliced tomatoes, avocado, or even a fried egg.
  • Cook the onions and bacon until they are crispy: This will give them a nice flavor and texture.
  • Season the sandwich to taste: Be sure to add salt and pepper to taste before serving.

Conclusion:

The onion and bacon cheese sandwich is a classic for a reason. It's simple to make, yet it's full of flavor. With its crispy onions, savory bacon, and melted cheese, this sandwich is sure to please everyone at your table.
