This reminded us of a BLT. It does sound strange, but we loved the way all the textures and flavors were perfect together. It's sweet, smoky, and savory. This is a great way to use up the abundance of tomatoes this time of year.

1 9 inch pie shell
5 large tomatoes, peeled and sliced
4 slice bacon, cooked and chopped
1 sweet onion, sliced or chopped
1 tsp salt
1/2 tsp pepper
2 Tbsp milk
1/2 c mayonnaise
1 1/2 c sharp cheddar cheese, shredded
1/4 c Ritz crackers, crushed
2 tsp butter, melted
2 green onions (scallions), sliced

Steps:

  • 1. Prick pie shell with fork and bake at 350 degrees for about 10 minutes.
  • 2. Fry bacon. Cook till tender. Drain, set aside.
  • 3. Peel and slice tomatoes to fill bottom of pie shell.
  • 4. Sprinkle with chopped onion and salt and pepper.
  • 5. Layer more tomatoes, salt and pepper (again).
  • 6. Mix mayo, bacon and cheese and milk.
  • 7. Spoon on top and pat down to cover tomatoes.
  • 8. Sprinkle with Ritz crackers mixed with melted butter
  • 9. Sprinkle Scallions on top.
  • 10. Bake 350 degrees for 30 minutes.

Pie crust
1/4 # thick cut bacon, cut into squares
3 Tbs butter
2# sweet onions (Vidalia), coarsely chopped
1 tsp garlic, minced
1Tbs fresh rosemary, chopped
4 lg eggs
1 1/2 c whipping cream
11/2 tsp salt
1/2 tsp pepper

Steps:

  • Preheat oven to 450 Roll dough out and line a 10" pie plate, leave 1/2 " over lay and crimp. Prick bottom 5 times w fork tines. Line pan w foil and weigh down w beans or weights Bake for 10 min, remove foil and weights and bake another 10 min. Set aside to cool Filling: preheat oven to 350 Cook bacon in pan until most of fat is rendered but bacon not browned or crisp, drain bacon and discard fat Melt butter and sauté onions for 2 min, add garlic and rosemary and continue to sauté until onions are wilted but not browned, another 3-4 min Assemble pie: Spread bacon on bottom of pie, pour onion mixture on top Beat eggs until frothy, whisk in whipping cream, salt and pepper Pour over onion mixture, bake until fluffy and set (about 45 min)
