1 sheet frozen puff pastry (from 17.3-ounce package), thawed
2 tablespoons butter or margarine
1 sweet onion, cut lengthwise into fourths and thinly sliced (2 1/2 cups)
2 teaspoons packed brown sugar
1/4 cup sun-dried tomatoes in oil and herbs, drained and finely chopped
1 round (4 ounces) Camembert cheese, cut into 3/4x3/4x 1/4-inch pieces

Steps:

  • Heat oven to 400°. Spray 2 cookie sheets with cooking spray. Unfold pastry on lightly floured surface. Roll into 12-inch square, trimming edges to make even. Cut into 6 rows by 6 rows to make 36 (2-inch) squares. Place on cookie sheets. Bake 12 to 15 minutes, rearranging cookie sheets after 6 minutes, until puffed and golden brown. Remove from cookie sheets to wire rack. Cool until slightly warm.
  • Meanwhile, melt butter in 8-inch skillet over medium heat. Cook onion in butter 15 to 20 minutes, stirring occasionally, until tender. Stir in brown sugar. Cook and stir until onions are coated. Stir in tomatoes. Remove from heat; keep warm.
  • Place cooled pastry squares on same cookie sheets. Press cheese piece into center of each pastry square. Fill with about 1 teaspoon onion mixture. Bake about 1 minute or until cheese is melted.

1 quantity of batter (see 'Goes well with', below)
small knob of butter , plus extra for greasing
2 tbsp finely grated parmesan
8 rashers smoked streaky bacon , chopped
4 spring onions , thinly sliced
140g cheddar , grated (this is about 200ml/7fl oz)

Steps:

  • Heat oven to 230C/fan 210C/gas 8. Make up the batter as stated in the pancake recipe and set aside. Grease a large, round, ceramic dish, about 22cm wide, and dust it with the grated Parmesan.
  • Heat the butter in a frying pan. Sizzle the bacon for about 5 mins until crisp, then leave to cool. Tip the bacon, onion and cheddar into the batter and stir until completely combined. Tip the batter into the prepared dish so it comes almost to the top, then bake for 30-35 mins until puffed up and golden. Bring piping hot to the table and serve straight from the dish with a crisp salad.

I love French onion soup, and the caramelized onions, herbs and Swiss cheese make this taste like French onion soup in crisp, flaky crust. 2 medium onions, thinly sliced
3 tablespoons butter
1/2 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon dried thyme
1/8 teaspoon pepper
1 cup shredded Swiss cheese
32 sheets phyllo dough (14x9 inches)
3/4 cup butter, melted
1/4 cup shredded Parmesan cheese

Steps:

  • In a large skillet, saute onions in butter until softened. Reduce heat to medium-low; cook for 30 minutes or until deep golden brown, stirring occasionally. Stir in the paprika, salt, thyme and pepper. Remove from the heat; cool. Stir in Swiss cheese., Lightly brush one sheet of phyllo dough with some of the melted butter; place another sheet of phyllo on top and brush with butter. (Keep remaining phyllo covered with plastic wrap and a damp towel to prevent it from drying out.) , Cut the two layered sheets into three 14x3-in. strips. Place 1 teaspoon of onion mixture on lower corner of each strip. Fold dough over filling, forming a triangle. Fold triangle up, then fold triangle over, forming another triangle. Continue folding, like a flag, until you come to the end of the strip. Brush end of dough with butter and press onto triangle to seal. Turn triangle and brush top with melted butter. 5 slices sandwich bread (Pepperidge Farm white bread is best)
mayonnaise as needed
1 small Vidalia or sweet onion, thinly sliced

  • 1. Preheat the broiler.
  • 2. Toast the bread lightly in a toaster oven. Remove the crusts. Cut the slices with a 2-inch round biscuit cutter and spread the rounds lightly with mayonnaise. Put a slice of onion on top of each piece and spread with mayonnaise again. Broil until golden brown. Serve hot.

1/3 cup butter or 1/3 cup margarine
1 cup all-purpose flour
1 teaspoon salt
1/4 teaspoon garlic powder
4 eggs
3/4 cup shredded swiss cheese (about 3 ounces) or 3/4 cup pizza cheese (about 3 ounces)
1 small onion, chopped (about 1/4 cup)

Steps:

  • Heat oven to 400°F
  • Heat water and butter to rolling boil. Stir in flour, salt and garlic powder. Stir vigorously over low heat 1 minute or until mixture forms a ball; remove from heat. Beat in eggs until smooth. Stir in cheese and onion. Drop dough by scant teaspoonfuls 1 inch apart onto lightly greased baking sheet. Bake until puffed and golden, 20 to 25 minutes.
