2 tablespoons unsalted butter
2 tablespoons olive oil
2 pounds sweet yellow onions, peeled and sliced very thin
1 teaspoon salt
1 teaspoon sugar
1/2 teaspoon freshly ground black pepper
2 garlic cloves, minced or pureed
1/4 teaspoon ground cloves
1 teaspoon paprika
2 tablespoons golden raisins
1/4 cup dry Madeira
5 cups rich chicken or beef stock
4 slices hearty country bread, toasted and brushed with 2 teaspoons olive oil.

Steps:

  • Heat butter and oil over medium low heat in large kettle. Add onions, salt, sugar and pepper and stir well. Cook very gently 30-40 minutes until limp and well caramelized. Add the garlic, cloves, paprika and raisins and cook one minute until their aromas are released. Add Madeira and simmer until reduced by half. Add stock, bring to the boil, then lower heat and simmer covered one hour, then simmer uncovered 30 minutes more. Place one crouton in the bottom of each serving bowl and ladle soup over.

3 1/2 pounds red onion, thinly sliced on a mandoline
2 teaspoons chopped fresh thyme leaves
1 clove garlic, minced
1 cup dry white wine
6 cups homemade or low-sodium canned chicken broth
Kosher salt and freshly ground black pepper
2 tablespoons cognac or brandy, optional
6 or 12 (1/2-inch) slices French baguette, toasted
12 ounces Gruyere, shredded (about 3 cups)

Steps:

  • In a large soup pot or Dutch oven, melt the butter over medium heat. Add the onions, cover and cook for 30 minutes, stirring occasionally. Remove the cover; increase the heat to medium-high and cook until the onions are brown and caramelized, about 30 minutes. (Stir the onions frequently toward the end of this stage in the cooking so they do not scorch or burn.) Add the thyme and garlic; cook for 2 to 3 minutes more. Pour in the wine and scrape up the browned bits from the bottom of the pan with a wooden spoon; simmer until the wine is reduced by about half. Stir in the broth and 1 teaspoon salt and bring to a gentle simmer. Cover and cook for 30 minutes. Add the cognac if using and season with pepper. (The soup can be made to this point a day ahead and refrigerated.)
  • Preheat the broiler.
  • Divide the soup evenly among 6 heatproof crocks or bowls. Top each with 1 or 2 slices of the baguette and about 1/2 cup of the Gruyere. Place the bowls on a rimmed baking sheet and broil until the cheese is bubbly and brown. Carefully transfer each crock to a plate. Serve immediately.

8 onions, sliced

It's a hearty bowl of sweet, brown, caramelized onions in a rich beef broth, enriched with a dose of sherry and topped with deliciously nutty, golden brown, melted Gruyère cheese. Why does Gruyère taste so good? Aged, low-moisture cheeses such as Gruyère and Parmigiano-Reggiano have a stronger protein structure than younger, softer cheeses like fontina or fresh mozzarella, and require higher temperatures to melt. The higher heat, combined with less moisture, causes the protein to actually break down, bringing out their nutty flavor.

4 tablespoons (1/2 stick) unsalted butter
6 onions, preferably Vidalia, sliced
2 leeks, white and pale green parts, well washed (see page 232), halved lengthwise, and thinly sliced into half-moons
1 shallot, chopped

  • To caramelize the onions, in a large, heavy-bottomed Dutch oven, melt the butter over medium-low heat. Add the onions, leeks, and shallot.
