1 ½ teaspoons olive oil
¾ pound pearl onions, peeled
2 cloves garlic, minced
⅓ cup dry white wine
1 cup beef broth
2 tablespoons tomato paste
2 tablespoons raisins
½ teaspoon grated orange zest
¼ teaspoon dried thyme, crushed
⅛ teaspoon ground black pepper
1 tablespoon minced fresh parsley

Steps:

  • Heat oil in a medium saucepan over medium heat. Saute onions until golden, about 7 minutes.
  • Stir in garlic, wine, broth, tomato paste, raisins, orange zest, thyme, black pepper and parsley. Simmer, uncovered, for 20 minutes, stirring often. When onions are tender increase the heat to high and cook, stirring constantly, until sauce thickens, about 3 minutes.

1 pound pearl onions
1/4 cup (1/2 stick) butter
24 garlic cloves, peeled
1 bay leaf
1 1/2 cups tawny Port
1/4 cup white wine vinegar
4 teaspoons sugar
1/2 teaspoon salt
1/2 cup raisins
1 1/2 teaspoons chopped fresh thyme

Steps:

  • Bring large saucepan of water to boil. Add onions. Boil 2 minutes. Drain. Rinse under cold water. Peel onions. Trim root end slightly, leaving root base intact.
  • Melt butter in heavy medium saucepan over medium-low heat. Add garlic and bay leaf. Sauté until garlic is golden brown, about 6 minutes. Add Port, vinegar, sugar, and salt. Simmer 8 minutes. Add onions and raisins. Simmer until onions are tender, stirring occasionally, about 9 minutes. Remove from heat. Stir in thyme. Discard bay leaf. Season with salt and pepper. (Can be made 1 day ahead. Cover and refrigerate. Rewarm over medium heat before serving.) Serve warm.

1 1/2 teaspoons olive oil
375 g white pearl onions, peeled
2 garlic cloves, crushed
1/3 cup dry white wine
1 cup stock (chicken, beef or veggie)
1 1/2 tablespoons tomato paste
1 1/2 tablespoons raisins
1/2 teaspoon grated orange rind (optional)
1 teaspoon finely chopped fresh basil or 1/4 teaspoon dried basil
1 teaspoon finely chopped fresh thyme or 1/4 teaspoon dried thyme
pepper

Steps:

  • In a saucepan heat the oil, add the onions, over moderate heat cook uncovered for about 10 minutes, stirring frequently.
  • Add the garlic, wine, stock, tomato paste, raisins, orange rind, basil, thyme and pepper.
  • Bring to a simmer and cook uncovered for about 20 minutes or until onions are tender, stir frequently.
  • Raise the heat to high and cook, stirring until the sauce has thickened (about 3 minutes).
  • This can be made made several days ahead (refrigerate) and reheated at serving time.
