This is my BF's pancake recipe for his diet. It came from a book by a French nutritionist Docteur Pierre Dukan, but the proportions have been tweaked a little to suit his taste. They're surprisingly yummy and have helped me lower my blood pressure!

4 tablespoons oat bran
2 tablespoons wheat bran
1 egg
2 egg whites
2 tablespoons nonfat plain yogurt
1 teaspoon baking soda (optional)

Steps:

  • Mix all ingredients in a bowl, and stir until well blended (I like to add a little baking soda to make the pancakes fluffier).
  • Cook pancakes as you'd normally do!
  • What we usually do:.
  • Coat a nonstick skillet with a little bit of oil using a paper towel.
  • Keep the pan on mid-low heat.
  • Pour a ladle of batter into pan.
  • Cook one side until the edges start to seem done.
  • Flip and cook the other side.

Oat bran cereal and buttermilk give a nutty, rich flavor to these SPLENDA® sweetened pancakes.

1 cup oat bran hot cereal, uncooked
½ cup all-purpose flour
¼ cup SPLENDA® No Calorie Sweetener, Granulated
1 teaspoon baking powder
½ teaspoon baking soda
⅛ teaspoon salt
2 cups buttermilk
¼ cup egg substitute

Steps:

  • Heat nonstick griddle or frying pan over medium to medium high heat.
  • Combine oat bran, flour, SPLENDA® Granulated Sweetener, baking powder, baking soda and salt in a large bowl. Set aside.
  • Beat together buttermilk and egg substitute in a small bowl with a wire whisk. Pour the egg mixture over dry ingredients. Stir together until ingredients are just blended and no large dry lumps appear.
  • Pour approx. 1/4 cup pancake batter onto hot griddle. Cook pancakes until puffed, browned and slightly dry around the edges. Flip over and cook other side until golden brown.

This is a variation on my Only Bran Pancakes (#190871). It's not as strict on the diet, but still doesn't use any flour, and much more fluffy and buttery! I used a half oat and half wheat bran mixture. (Prep time is only to prepare the batter.)

1 cup natural bran
1/2 tablespoon baking soda
1/2 teaspoon salt
1/2 cup low-fat milk
1 tablespoon unsalted butter
1 egg
1/2-1 cup low-fat buttermilk

Steps:

  • Mix together bran, baking soda, and salt.
  • In a small pot, heat together milk and butter until hot (not boiling).
  • Stir in hot milk to bran mixture, and let sit for 10 minutes.
  • Add egg to bran mixture, and mix until well blended.
  • Stir in buttermilk until the batter reaches desired consistency.
  • Cook pancakes!
